茄汁扒鲍鱼 <wbr> <wbr> <wbr>美味鲍鱼三步曲

 

 

 

 

一次买了12只鲍鱼,6只做菜,6只炖汤茄汁扒鲍鱼 <wbr> <wbr> <wbr>美味鲍鱼三步曲,吃货的生气只是一分钟吧,见到吃的就开心茄汁扒鲍鱼 <wbr> <wbr> <wbr>美味鲍鱼三步曲

 

 

茄汁扒鲍鱼(简单三步做出媲美饭店的美味鲍鱼)

 

 

原料:鲍鱼、油菜、大蒜、葱姜、蒸鱼豉油、油、番茄沙司、蚝油、糖等

做法

1、鲍鱼用刷子刷干净,软体和壳都要刷干净,然后用水冲洗,你会发现这时候的鲍鱼白了不少

2、用一把刀子沿着鲍鱼壳伸进去,将整片软体分离,翻转后,你会发现鲍鱼的内脏,然后去除,只留下贝肉

3、冲洗干净后的鲍鱼和壳就可以用来做菜了,在鲍鱼肉上交叉打花刀,葱姜蒜分别剁碎备用

4、鲍鱼放回壳中,在上面撒葱姜末,均匀淋入少许蒸鱼豉油,冷水上锅,开锅后立刻关火,焖几分钟就好

5、将油菜心放入开水锅中焯熟,水中加入一小勺盐和几滴油,焯好后捞出沥干水分,摆在盘中,将蒸好的鲍鱼也摆入

6、锅中少许油,油热后下蒜末爆香,加入一小勺番茄沙司、一小勺蚝油和半小勺糖调成料汁,关火后撒在蒸好的鲍鱼上即可

 

 

小窍门:(鲍鱼要想好吃也就三步)

 

1、清理很重要:废弃的干净牙刷最好了,啊哈哈,保证刷滴干干净净,内脏啥的都要去掉,否则会影响口感,不过以前活鲍鱼涮火锅啥的,我也就那么吃了

2、上锅蒸:打上花刀可以让鲍鱼更好入味,其实鲍鱼本身没有啥鲜美,就只能靠调料来增色,加点葱姜加点豉油,最重要一点,千万别蒸火大了,否则就是橡皮

3、调料汁:这个随个人喜好,我反正是喜欢茄汁味,好看又好吃
