前所未有的累~~~我一直就觉得周末比平时还要累,今天尤其~~~周一的早上,我差点就爬不起来了,哎~~学车啊,万恶的学车啊~~~~为了做个有证的马路杀,我真是大放血了~~~数一数我多少个美好的休班扼杀在了摇篮里~~ 凤梨虾球 <wbr> <wbr>学一学饭店里的招牌菜

凤梨虾球(试试就知道,我们这里饭店的招牌菜)

 

原料:虾、菠萝、料酒、葱姜、糖、白醋、盐等调料

做法:新鲜的海虾去头剥壳,用针挑去沙线,用料酒、葱姜末抓匀腌制一段时间

菠萝去皮,菠萝肉切成小块,用淡盐水浸泡一段时间,取部分果肉榨成汁

锅里油烧热,大火烧至六七分热,腌制好的虾仁,择去葱姜,在干淀粉里裹一下

然后沾满湿淀粉,下锅炸制,炸虾仁的时间要短,防止虾仁炸老

捞出后,再复炸一遍

锅里放一大勺糖,小火加热,倒入菠萝汁,加入适量盐和半勺白醋,加入几滴香油

等汁熬浓稠,冒着小泡泡时,倒入菠萝和虾仁翻炒均匀即可出锅

 

注意:菠萝一定要用盐水浸泡,不但可以去酸加甜还可以避免皮肤过敏

虾仁外面要裹糊后再下锅炸,保持虾仁的脆嫩,防止虾仁缩水

虾仁要先裹干粉再沾湿淀粉,这样可以防止虾仁在炸的时候脱糊

复炸两遍可以使外面的糊特别酥脆,但时间不要过长,防止虾仁炸老缩水

 

挑选好吃的菠萝:

一、看菠萝外观

优质菠萝的果实呈圆柱形或两头稍尖的卵圆形,大小均匀适中,果形端正,芽眼数量少。如果不是立即食用,最好选果身颜色为浅黄带有绿色光泽,约七八成熟的为佳。
二、捏菠萝硬度
用手轻轻按压菠萝,坚硬而无弹性的是生菠萝;挺实而微软的是成熟度好的;过陷甚至凹陷者为成熟过度的菠萝;如果有汁液溢出则说明果实已经变质,不可以再食用。
三、闻菠萝气味
成熟度好的菠萝外皮上能闻到轻微香味;浓香扑鼻的为过熟果,时间放不长易腐烂;无香气的则多半是带生采摘果,所含糖分明显不足,吃起来没味道。

这道菜使用了菠萝,果香浓郁,饭店里做出的菜品糖汁金黄,是因为他们用了菠萝浓缩果汁,咱在家没有,我就用了菠萝汁,还加入适量糖和白醋,也可以增强那种酸甜味,只是颜色没有饭店里卖的好看,但可能更健康凤梨虾球 <wbr> <wbr>学一学饭店里的招牌菜
