原料:新鲜海虾一斤、大蒜半头、面包糠、绿茶适量、白酒、胡椒粉、盐、葱姜、淀粉等

做法

1、虾清洗干净,挑去虾线减去虾须,葱姜剁成末备用

2、少许开水冲一撮绿茶,待茶叶完全泡开并凉透时,将茶叶水倒在鲜虾上,并加入2小勺盐、几滴白酒、葱姜末腌制半小时,茶叶沥干备用

3、用清水漂洗虾,沥干水分后,在虾凉面沾一层薄淀粉,锅里放一大勺油,油热后将虾放进去,煎熟一面翻另一面,直到虾颜色鲜红即可夹出

4、蒜剥皮剁成末,炒锅里放少许油,放蒜末入锅煸香,小火不停地翻炒,直到蒜粒变成金黄,加入面包糠一起翻炒,加少许胡椒粉、盐和鸡粉,将沥干的茶叶放进去一起翻炒,最后将煎好的虾放进去,让虾沾上面包糠即可

 

小贴士:

1、茶叶水要完全凉透后才能用来腌虾,茶叶水可以去腥增鲜

2、虾至少提前腌制半小时才能入味

3、沾淀粉之前,最好用厨房纸将虾表面水吸干,这样沾淀粉均匀,煎的时候不蹦油

4、煎虾的时候一定要注意不要煎时间太长,否则虾肉会收缩,只要熟了即可(看颜色辨认)

5、沥干的茶叶不要扔啊,至少吃菜的人能理解为何这虾的风味如此特殊避风塘茶味虾 <wbr> <wbr> <wbr> <wbr>值得推荐的好味道
