今天的这个,年轻一点的孩纸也许没看过,但往前退多少年,咱奶奶那辈的人都知道,这荷包加吉鱼可是咱胶东宴客菜的顶峰,那可是贵得不得了的贵客临门才能做的荷包加吉鱼 <wbr> <wbr> <wbr> <wbr>胶东宴客菜的顶峰~~常言道“无鱼不成席”,这条鱼可不能马马虎虎的,此菜一出,什么海参、大虾都要往边站滴……

做这道菜,红鳞加吉鱼是首选,黑鳞加吉次之,俺这条是红鳞的,看人家的脑袋、鱼鳍、背部,身份的象征啊,因为红所以喜庆,所以是宴席上的必备荷包加吉鱼 <wbr> <wbr> <wbr> <wbr>胶东宴客菜的顶峰

荷包加吉鱼 (如何做一道胶东顶级宴客菜)

 

原料:加吉鱼、肉馅、香菇、葱姜、辣椒、蒜、老抽、生抽、料酒、盐、香油等

 

做法:

1、猪肉馅里加入一小勺生抽、少许料酒、一点盐、一勺油、半勺香油搅拌均匀,腌制10分钟

2、蒜切片,部分葱姜切末,剩余葱姜切丝,香菇切丁备用。将葱姜末加入猪肉馅里,香菇也放入,搅拌均匀

3、加吉鱼刮去鱼鳞,开膛括肚,去掉内脏,清洗干净,然后撒入一勺盐腌制半小时

4、将猪肉馅填入腌好的加吉鱼腹中,然后用针线缝上,恢复鱼身的完整

5、锅里放适量油,油热后将辣椒片和蒜片下锅煸香,将鱼放入锅中,两面煎一下,加入半锅开水,加入一勺白酒,加入适量老抽上色,撒入姜丝,盖上锅盖,小火焖烧30分钟

6、然后加入葱花,接着闷烧10分钟,直到锅中汤汁收紧,即可关火

 

小贴士

1、肉馅要提前腌制,然后加入葱姜,加入香菇可以使肉馅的口感更丰富

2、鱼收拾干净后,用盐提前腌制,这样烧鱼的时候不需再加盐了,鱼肉更入味

3、缝合鱼肚的时候,针脚可以密实些,原则是不漏肉馅、不散开

4、烧鱼的时候要用开水炖煮,热胀冷缩不解释,加入白酒起提鲜的作用
