炒肉大拉皮   自家出品更安心~~

这几天我过得很安宁,自从上次考完倒桩后,就再没通知我去~~~~~~虽然在大夏天学车很痛苦,但是挨一天算一天吧~~~~即使我不愿承认,春姑娘还是彻底走了,今天温度能达到28度炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~~~~~等着吧,一年中最难熬的日子刚刚拉开序幕炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

老爹太后有这样的习惯,出去吃饭会点一些很传统的菜,什么红烧排骨,炸里脊,酱焖鱼什么的~~~那些没吃过不敢点,怕不好吃~~~炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

而我恰相反,什么花花样就点什么,这是不是年轻人和上了岁数的人的区别~~~~炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

 

但是有一道传统菜是田家哥很爱吃的,反正出去只要他点菜,他就点这个~~~~那就是炒肉拉皮儿~~~~~因为他是北马人,啊哈哈,这其中有没有心理作祟,俺也不知道~~~~~炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

 

 

 

 

自制炒肉大拉皮儿~~(家庭简易版)

 

原料绿豆淀粉、里脊肉、黄瓜、鸡蛋、胡萝卜、葱姜、麻汁酱、盐、糖、醋、生抽、辣椒、芝麻、花椒、大料

 

做法绿豆淀粉和水按照1:4的比例混合,加入少量盐,搅匀成很稀的淀粉浆,专业人士用的是大旋子,我没有,用了一个平底的小铁盘~~~

锅里加水大火烧开,然后转小火,在整个做拉皮的过程中让锅中的水保持微开的状态,冒着小泡泡的程度就好

铁盘中刷薄薄一层油防沾,接着盛入适量淀粉液,转一下使盘内淀粉液平摊均匀,然后坐在锅的水面上,我的盘子轻,直接飘在了水面上炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

 

淀粉浆遇热会凝结成白色的固体,用一个大勺舀少量水倒入盘子里一些,拉皮受热逐渐由白变为透明,稍等片刻,等拉皮熟透,将盘子里多余的水倒出,将盘子拿出投入到冷水中。盘子里的拉皮遇到冷水就自动滑下来了炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

 

依次重复,接着做下一张拉皮,然后把那些凉透了的拉皮铺平叠好。

 

接下来的步骤:

拉皮切成长条,放在大盘子里备用

里脊肉切成丝,用蛋清和少量淀粉抓匀,用热油滑熟,加入葱姜,加入少量生抽调味上色

鸡蛋下锅摊成蛋皮,切丝,黄瓜和胡萝卜切丝,摆在拉皮的上边

麻汁酱里加入少量水调匀,加入适量盐、糖、醋、鸡粉等调味

热油倒入碗里将辣椒炸成辣椒油~~~~(碗里有辣椒粉、芝麻、花椒、大料、盐等)

最后将刚炒好的肉丝倒在拉皮上,浇上调好的麻汁酱和辣椒油即可

 

注意事项:

做法真的很简单,有点耐心就行了~~~小心烫手

要选择绿豆淀粉啊,绿豆做得最好吃最劲道

做拉皮时,在铁盘里刷一层油是为了防粘,做好的拉皮很容易就取下来

刚做好的拉皮是完全透明的,等凉透了就会变白

做好的拉皮最好放在水里,防止互相粘连,随用随取

拉皮的薄厚自己掌握,取决于粉浆放的多少,我摊的拉皮比外边卖的厚好多,吃起来弹力无比炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~类似于凉皮的感觉~~~~外边卖的那叫粉皮,太薄了啊~~~~

喜欢吃蒜的放点蒜蓉一起拌

我们这里流行这菜我一点也不奇怪,与粉丝同属一宗~~~~炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

这个菜以前在北马吃的都是用辣椒油和醋拌的,还有的用蒜的~~后来在黄城吃的几次都是用麻酱拌的,更合我口味~~~~~所以俺这次用的是麻酱创新版的,真香啊~~炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~这可能是我爱吃凉皮的心理作祟吧~~~

不是我打击外边某些卖粉皮的,太后的话忒有道理,白色的淀粉怎么能做出绿莹莹的粉皮呢,是绿豆就是绿色的啊???成分不明确~~炒肉大拉皮 <wbr> <wbr> <wbr>自家出品更安心~~

~哎~~为了生计人家也不容易,不过还是我自己做的才吃得放心啊~~~
