它似蜜(本是一道清宫御膳


 

原料羊里脊肉200克、白糖40克,甜面酱5克、酱油5克、老抽5克、醋3克、料酒5克、湿淀粉25克、姜汁5克、香油25克

 

做法:羊里脊肉切成长3厘米,宽2厘米的薄片,用甜面酱,湿淀粉15克上浆,并抓匀备用

将姜汁、老抽、酱油、醋、料酒,白糖和湿淀粉10克调成芡汁。(姜汁就是用一勺开水泡姜丝)

小半锅花生油烧至七成热,放入浆好的羊肉片迅速拨散防止粘连,待肉片成熟后捞起滤油。

将炒锅置于火上,放入一大勺香油烧热,倒入滑好的肉片和芡汁,快速翻炒使肉片沾满芡汁,淋上剩下的香油即可。

注意:羊肉片切得要薄一点,吃起来才会觉得嫩滑~~(稍微冻一下会比较好切~~~)

滑羊肉时要注意千万别时间过长,否则就老了~~

据说,它似蜜先前叫塔斯密,来自西域。大清乾隆年间,随香妃入宫,这道西域名菜也便一同进了宫。有一回,乾隆爷乘兴吃了回塔斯密,不禁拍案称好,随即赐名“它似蜜”。

不过,还有一个说法是,慈禧太后在宫内用膳,一道色泽红棕、肉质软嫩的菜上来,老佛爷尝后十分喜欢,问:“此菜何名?”因是首创,御厨一时答不上来,则说道:请太后赐名。”慈禧答:“此菜甜而入味,它似蜜”。从此“它似蜜”这道菜流传至今~~~

不过我更喜欢第一个说法,香妃这个历史人物有一种传奇的色彩,被太多小说和影视剧渲染,无论是《书剑》中的喀斯丽,还是《还珠》里的含香~~~都是悲情苦命的女子~~或许历史上的香妃并没有这么失意,但远离故土和亲他邦毕竟不是件欣喜的事情~~~~用一道家乡小吃来寄托相思也无可厚非~~~
