五一和爸妈出去玩,在饭馆要了一条七斤大的鱼,吃的很开心,毕竟我很少有机会见那么大的鲅鱼,没拍下照片来很是遗憾,所以当老爹买回这条八斤大的鱼时,我是全程记录的,从收拾鱼到入锅~~~~~~~~(直播来了)~~~酱焖鲅鱼 <wbr> <wbr> <wbr> <wbr> <wbr>遇到一条八斤大鱼

俺不知道俺爹是从哪里找了个破箱子,把这鱼从龙口海边拉回了黄城,不容易的啊,这大爷才是真正的吃货,动力无限啊酱焖鲅鱼 <wbr> <wbr> <wbr> <wbr> <wbr>遇到一条八斤大鱼(太后的玉手~~~~~)

眼睛很亮,这时候它已经没有生命了~~~可怜的哇,虽然俺很爱吃鱼,但看到这么大的鱼变成盘中餐,还是有一点可惜,得长多少年哇(虽然我爱吃肉,却很可怜那些被我吃下去的东西,哎~~~~酱焖鲅鱼 <wbr> <wbr> <wbr> <wbr> <wbr>遇到一条八斤大鱼矛盾的人)

体围看俺的手,一边量不过来,看到这条青线了吧~~~~说明很新鲜的,闪着蓝莹莹的光

清洗干净后,切段,这两块被太后放冰箱速冻起来了,准备做鱼丸子和鲅鱼饺子~~

鱼头鱼尾和鱼籽以及一部分鱼肉给酱焖,俺们这完全按照饭店里的程序走~~~~(那次之后俺爹就念念不忘,说没吃够酱焖鲅鱼 <wbr> <wbr> <wbr> <wbr> <wbr>遇到一条八斤大鱼

 

做法:

大鱼肉比较厚,要想入味,要提前腌制,放入几大勺面酱,再加入适量盐(腌半小时)

锅里放两大勺油烧热,放入辣椒,再把蒜粒先放锅里炸一下,油里就会有蒜香,用这个油做鱼味道特别好,把鱼放进去两面煎一下,淋入少许醋和老烧去腥~~~~

加入半锅开水炖鱼,大火烧开转小火,将鱼籽什么的都放进去

炖的过程中,要时不时铲一下底,防止糊锅

直到汤汁收干,即可撒适量韭菜和香油出锅

 

注意:

炖鱼时发入一点点辣椒,提味~~~

炖新鲜的海鱼时切忌别加太多调料,什么大料之类都不能放,会影响鱼本身鲜味

老烧必不可少,最好是高度老白干,试试你就知道,海鱼的腥味变鲜味

一定要小火炖鱼,炖的时间长点才好吃,“千滚豆腐万滚鱼”~~~~~

要时不时铲一下底,防止糊锅
