    昨天是女人的节日，大家QQ上聊的最多的自然是祝贺女人们节日快乐。我们单位里一个同事发了一个笑话，说女人节那天，一个小姑娘拉着爸爸的手，说，“爸爸，今天咱们坐下来好好休息休息，让妈妈给我们做点好吃的。”爸爸感到很奇怪，心想，这孩子怎么这么不懂事，明明是你妈妈的节日，怎么还要她给咱们做好吃的呢？所以就问，“为什么呢？”女儿说，“爸爸啊，今天是三八国际“父女”节，是你和我的节日啊，当然要妈妈来给我们庆祝啊!”好吧。可惜我家只有Vincent,什么时候有“父子”节啊哈哈！昨天放学回来，问他，“妈妈的礼物送了吗？”他说，“早送了，我送我画的画！”好吧，你真行啊呵呵，自己画一副画就当礼物了。对哦，将来成名了，这个可升值的啊！

 

    在家里我们经常会做炒鸡蛋。有人说，这也太简单了，鸡蛋打散，下油锅翻炒几下就好了。没错，虽然看似简单，但做出来的口感相差可大了呢，有的人炒出来糊糊的，有的炒出来黑黑的，有的做的吃起来没熟的感觉，有的吃起来又老又硬，有的吃起来有股腥味，有的吃起来鸡蛋发干。这是什么原因呢？其实你可别说，炒个鸡蛋还真是有窍门的，就想上次我做的水蒸蛋一样，懂不懂做出来的效果可真是大相径庭啊！窍门其实也属于生活常识的一部分，知道的越多，你就越厉害，慢慢做菜就可以成为高手，万事熟能生巧真的没有错！

 

    那么做炒蛋有什么独门秘籍吗？有，听我讲来。

 

    首先要把鸡蛋炒嫩了！这嫩怎么来？水和油缺一不可，油的问题很好解决，只要适当多加一点，那么水呢？鸡蛋里不是有水吗？但是鸡蛋的含水量随着储存时间变长也会减少的，所以我们可以适当加点水，加什么水呢？一般我们在炒蔬菜的时候都加温水，加冷水容易让口感变老。那么在鸡蛋里加多少水呢？一个鸡蛋，喝汤的小汤匙一勺，大的就半勺，这样鸡蛋的含水量增加了，而且会更加松软，量也会感觉多了点；

 

    再者鸡蛋不是有股腥味吗？对的。那怎么去除呢？加料酒。料酒能去腥大家都知道，但是什么时候加呢？对。炒的时候加最好，可以让鸡蛋的腥味连同料酒蒸发出去就可以了。

 

    最后火候怎么把握？确实炒鸡蛋非常重要，一开始油温不高，鸡蛋就不能变蓬松起来，太高就会焦糊了，所以记住先热锅，烧到几乎锅子都要冒烟了再放油，为什么呢？有人说为什么不直接把油倒进锅让油烧到冒烟？你比较一下哪个做法健康呢？你看后者都把油烧到冒烟了，那时侯油里致癌物质挥发出来了啊，这样的菜做出来就不健康了，我们要好吃，但不能让油在锅里呆的太久，所以我们只要一开始尽可能把锅烧热再加入油，当油温7成热左右，判断标准是拿筷子沾点鸡蛋液放入油锅里，看到鸡蛋液能沸腾起来就正是时候！那么放入鸡蛋后是不是一直要大火呢，这要看情况：如果你想做完整的蛋皮，那么让鸡蛋沿锅四周溢开来后要马上改小火；但是不这么讲究，那就可以用大火不断翻炒30秒就可以出锅了。

 

    最重要的三个窍门就是这样，其他几个我做完后再给大家总结。

 

原料：土鸡蛋三个  韭菜一小把

调料：盐   水  料酒几滴

 

做法：

1.鸡蛋打入碗中后加点盐；

2.用筷子朝一个方向用力打散,筷子的运动是个圆锥形，这个圆锥下面是碗底，锥顶在碗正上方，距离碗底6厘米左右吧，这样打可以让空气进去，让蛋清和蛋黄充分融合；

3.在蛋液里加入两勺水(勺子大小如下图可以参考）；

4.韭菜切碎后加入蛋液里搅拌一下；

5.热锅冷油，油温7成热时倒入蛋液，划散蛋液翻炒或者让蛋液先稍微定性后再翻炒；

6.加入几滴料酒再翻炒几下就可以出锅了。

 

 

其它4个要点：

1.打鸡蛋的时候筷子的运动是个圆锥形，这个圆锥下面是碗底，锥顶在碗正上方，距离碗底6厘米左右吧，这样打可以让空气进去，让蛋清和蛋黄充分融合；

2.韭菜最好是当油温差不多的时候再放进蛋液搅拌，因为韭菜遇到盐会出水，时间越久水分都流到蛋液里韭菜的口感会影响；

3.炒鸡蛋的铲子手法不一样，成品也会不一样，可以先定性再用铲子铲成小块翻炒，也可以一开始就划散，做出的造型不一样，但是口感都很鲜嫩；

4.炒鸡蛋不用放味精或者鸡精，因为鸡蛋里就有味精的主要成分谷氨酸钠啊！

        
        
        

 

 

Vincent说这个鸡蛋怎么那么好吃！我说，我还放了你不喜欢吃的韭菜呢！哈哈，因为韭菜小，牙齿是咀嚼不到的，因为Vincent只换了两颗牙，其他牙齿缝隙大，所以他不喜欢吃韭菜。这回，他可以大口吃了啊，韭菜那个香啊！

 

 

真的太好吃了啊，周末继续炒吧，现在是韭菜季，春天的韭菜最营养，也最嫩，和鸡蛋搭配真是完美。用我的方法保证好吃，赶紧试试啊！不好吃找我算账哈哈！
