     记得某一次在晚饭大神里吃的瓤子饼,很多同鞋说喜欢,还有不少人向我要做法,其实做法不难,这次特意拍了步骤图。瓤子饼是龙口本地土话叫法,实际就是千层饼或手抓饼,虽然这名字不洋气,但是我这辈子只想这么叫,“乡音难改故土难离”…… 美味瓤子饼 <wbr> <wbr> <wbr> <wbr>40种胶东龙口特色面食

原料:面粉300克、热水120克、凉水60克、盐1/2小勺、油2勺、葱适量

 

做法

1、面粉中倒入热水,边倒水边用筷子搅拌,最后搅成雪花状的面片,分几次加入凉水和成不黏手的面团,一旁醒制30分钟,葱切末备用

2、醒好的面团拿出揉匀,分成3个大小均匀的面团,用擀面杖擀成尽可能薄的方形面片,在面片上撒适量油,将面片四边分别向中心折叠,这样可以让油均匀摊开,

3、然后在面片上均匀撒一层盐,然后再均匀撒一点面粉,最后均匀撒一层葱,最后将面片自上而下卷起来成条状

4、双手握面卷的两端反方向拧,然后将面卷盘起来,最后擀压成直径20厘米左右的饼状即

5、平底锅(我用的是饼铛)刷一层油,放入面饼,在面饼表面也刷层油,中小火加热,一面烙好后翻面,直到面饼完全成熟后,关火,然后使劲地摔打面饼几下即可

 

小贴士:

1、烙饼的面团为烫面,活面时热水和冷水的比例为2:1,做出的饼清爽不粘牙

2、烫面要活得软一些,还要醒发半小时,这样做出的饼非常柔软,醒好的面团如果粘手的话,可以适量用些手粉

3、做饼的时候,无需做油酥,只要油、盐、面、葱撒均匀,做出的饼就会分层很好

4、烙饼的时候,饼的表面也要刷层油,这样烙好的饼更酥脆,中小火烙饼,中途翻面一次

5、最后的关键步骤:出锅一定要多摔打几次,狠狠摔,泄愤似滴摔美味瓤子饼 <wbr> <wbr> <wbr> <wbr>40种胶东龙口特色面食,这样层次就摔出来了,做出的饼就和街上卖的手抓饼一样

6、马上热吃最好,不是马上吃的话,要在饼上盖个盆,防止饼凉了发硬
