龙口这两天的天气真是太“好”了,比后娘的脸还夸张,比翻书都快,周日有21度,那个阳光灿烂啊,我有种初夏的感觉,今天就是1度,大家又穿上了羽绒服~~~~~~

果然是那啥两天,就让你好看……蛤蜊蒸蛋 <wbr> <wbr> <wbr>鲜美的海鲜蛋羹~~~

有一天天刚亮和田家哥哥去赶早市买的,很新鲜的黄蛤,都张嘴喷水呢,就是沙有点多,用盐水缓了大半天才干净~~~~(蛤蜊龙口话叫“嘎喽”,老黄县们听着亲切吧~~~)

 

让蛤蜊吐沙的小窍门好多,列举一两个:蛤蜊放盆中用淡盐水养着,水里放几滴香油,让蛤蜊吐沙快(不过那种嘴已经张开合不上的,说明蛤蜊已经死亡,安葬它吧~~~~)

或者水里放几根铁钉,蛤蜊也会多吐沙子~~

那天还看到一个,将蛤蜊放进结实的袋子里,扎口后,使劲的摇晃袋子~~~~(这个原理我知道,我晕车的时候也会吐~~~~蛤蜊蒸蛋 <wbr> <wbr> <wbr>鲜美的海鲜蛋羹~~~

蛤蜊蒸蛋


原料:蛤蜊、鸡蛋、香油等调料

做法:蛤蜊吐净沙后,放锅里添水,加入两片姜和葱,大火煮熟(蛤蜊一张嘴就关火,时间长了,肉就老了)

鸡蛋打散,将煮蛤蜊的水倒入和蛋液一起颤开,鸡蛋和水的比例1:1(煮蛤蜊的水要冷却)

取一盘子,盘底和四周刷一层食用油,将蛤蜊在盘子里排好,将蛋液过筛倒入盘中,蛋液不用过多,没过蛤蜊一半即可,这样蒸出来的蛋羹很好看~~~(外貌协会的适用,不在乎的您直接把蛤蜊剥壳,和蛋液一起蒸,也很好吃~~~~~)

 

外面覆一层保鲜膜,凉水入蒸锅,大火烧开转中火十分钟,蒸熟即可~~~

 

注意

蛤蜊本身有咸味,煮出的汤也有咸味,蛋液里一般不用再加盐,吃的时候可以撒海鲜酱油,味道不错

在盘子里刷油,这样吃完后,你就知道很好刷碗的

过筛能去掉泡沫和杂质,让蛋羹蒸出来更细腻

保鲜膜可以防止蒸出蜂窝蛋羹,做出的蛋羹平滑~~~

现在的蛤蜊很便宜,5元一斤,煮好的肉还炒了一次鸡蛋,同样很好吃~~~

同样的材料,两种不一样的味道,却是同样的鲜美无比~~蛤蜊蒸蛋 <wbr> <wbr> <wbr>鲜美的海鲜蛋羹~~~
