    我家好男儿昨天开始了暑假的游泳学习。昨天是外公带他去游泳馆，早上九点半学到十一点。回来我问他，学得怎么样？他说没有忘，去年的动作都记得，还能坚持游个十米。非常不错啊！怎么样，玩得很开心吧？他说，很喜欢！晚上，我睡觉前，查看他有没有把毯子盖好，一看，好家伙，居然整个人是横着睡的，这回是在梦里游泳吧！

 

    很多人看我博客，说我怎么有时间做菜？我想如果很多人平时不加班的话，回到家里烧几个菜应该还是有时间的。那有人问了，那不是天天要买菜？那怎么有时间？呵呵，所以大家就要利用周末的时间好好规划。周末可以简要罗列一下下周主要吃的菜，然后就是上超市采购，买来的肉，鸡，牛肉，是可以放在冷冻室，至于蔬菜，在冰箱冷藏室保鲜三天是没有问题的，所以也就只要在后半周再去买点蔬菜就可以了。当然新鲜的鱼当然还是马上烹饪。只要你规划好时间，还是有时间来好好享受自己烹饪的美食的吧！

 

    周末，按照惯例，Tony会上大餐，今天要上一款避风塘风味花蛤。那么什么是避风塘呢？顾名思义，避风塘是台风侵袭时中小型船只用以抵御烈风和大浪的庇护所。

 

    但是避风塘和菜有什么关系呢？为什么会风靡世界各地？每年6到9月份，台风都会侵袭香港。为避免出入香港的船只遭到台风侵袭，1862年，香港政府在维多利亚海港修建船舶躲避台风的港湾。那里除了可以停泊50艘巨轮外，还有许多小型船只也会来此躲避台风。共有11个避风的地方，最大的就是铜锣湾，被当地人叫做避风塘。

 

    有渔民把目光瞄上了铜锣湾，开始驾船来到铜锣湾，支起炉灶，用渔家特殊的烹调方式，经营特色美食。比如：海鲜、粥、粉、面等，最出名的就是“避风塘辣椒炒蟹”、“避风塘草虾”、“避风塘炒面”等。

 

    每到夜幕降临，张灯结彩的渔船成群结队停靠在岸边，人们在摇橹的小艇上享受美食，欣赏表演，一片歌舞升平的景象，渐渐形成一个“水上街市”。

 

    80年代开始，“避风塘”以其特色风味被带到岸上。从此，日本、新加坡、美国、中国内地和台湾地区悄然兴起了一家家的“避风塘”，有的城市还将“避风塘”引进星级宾馆。

 

    所以简单地说，什么是避风塘风味呢？是说，广东沿海一带的渔民，一旦在捕鱼时遇到大风浪，便只能选择到避风塘內躲避风浪；在这一段无以维生期间，渔民们只好利用刚捕获自海鲜渔获，现场捞煮、料理，烹制成一道道鲜美的美味以赛宴来客，这就是避风塘美食的由来；由此可知，避风塘主食的特色就是绝顶鲜美的美味。

 

    我们浙江和广东一样，都是沿海，而且浙江也是每年会遭受台风的袭击，所以我们可以想像，其实渔民的生活是蛮艰苦的，台风一来会影响他们的作业，二来，因为台风海水倒灌，他们自己养的鱼也会遭殃，遭受惨重损失！所以，现在当我们听到避风塘炒什么，名字虽然还蛮浪漫或者说很有味道，其实里面也是饱含了渔民的艰辛！所以只有在台风来的时候，他们能够短暂的歇息，给自己享用一道美味。他们用金灿灿的蒜，姜，非常重口味地做最新鲜的海鲜。蒜的味道可以化解海鲜的腥味，海鲜的味道很嫩滑，很原味，但又有蒜，葱和辣酱，酱料这些重口味的香味，让人胃口大开，非常惹味，而且吃了后让人回味无穷，一回想，就会让人忍不住咽口水，这就是避风塘的魅力。

 

    避风塘风味中最著名的自然是避风塘炒蟹，但是今天tony要做的是花蛤！我们来看做法。

 

原料:花蛤  干葱头  大蒜  生姜  葱  干辣椒

调料:色拉油　酱油  糖

 

做法:

1.大蒜剁成蒜蓉，生姜切成丝，剥好干葱头，葱清洗后把葱白部分先切下；

2.花蛤先放在淡盐水浸泡一个小时后再清洗干净；

3.锅里放水烧开；

4.加入花蛤；

5.看到花蛤微微张开就马上出锅；

6.过滤后用冷水冲一下。

 

7.热锅后放入油，加入蒜蓉；

8.加入生姜丝。小火煸香；

9.加入切好的干辣椒煸炒一会；

10.加入葱白继续小火煸炒；

11.加入干葱头煸炒到香味完全出来；

12.加入花蛤。

 

 

13.加入花蛤后记得要开大火，接着马上放酱油；

14.马上盖上锅盖20秒就差不多了；

15.打开锅盖加入半勺白糖，颠锅，就可以出锅了，有了酱油不需要盐，做

海鲜不需要鸡精。
