2012已进入倒计时状态,站在29岁的门槛上,忽然间很桑心冰糖葫芦 <wbr> <wbr>那些记忆深处的美食~~~~人是不是越长大越怀念过去,如果时间并没有淡去记忆中的一些人和事~~~~~,相反它们慢慢积淀下沉,变成了心底的一块银子,越擦越亮冰糖葫芦 <wbr> <wbr>那些记忆深处的美食

冰糖葫芦(往事不能重现,但有些味道却可以复制)

 

原料:山楂、冰糖150克、开水150克、竹签(就这些,简单吧)

 

做法: 1、山楂清洗干净,去掉蒂部

2、大块的冰糖放入微波炉高火一分钟,轻轻一掰,立马变碎片

3、清理干净的山楂用竹签子串起来

4、将冰糖碎放入锅中,倒入同等份量的开水,中火加热,可以用铲子慢慢搅拌,加快冰糖溶解

5、当所有的冰糖都溶解后转小火,慢慢加热,这个时间有点长,大约在七八分钟吧(熬过月饼糖浆的应该很有经验,都差不多,只是那个里面有柠檬酸所以一直不凝固)

6、仔细观察糖液的泡沫,当糖液的颜色变得稍微有一点点黄,泡沫繁多很拥挤时,差不多就是好了,将串好的山楂放进去快速滚一下,拿出放在抹了油的铁盘中,放冷处凝固10分钟即可

 

注意:

1、一定要开水溶解糖,开水和冰糖的比例为1:1(当然,外面卖的没有放冰糖的,成本限制,你也可以用白砂糖,但要小心,砂糖比冰糖更容易熬过火,颜色会发黄、甚至发黑)

2、观察糖液的颜色和泡沫,冰糖的颜色不会怎么发生变化,只是微微有点黄 

3、鉴定糖液是否可以的最好办法:准备筷子蘸一下,放入冷水中,20秒后拿出来,咬一下看是否凝固且不粘牙

4、盘子一定要刷油,并放置寒冷处十分钟让其彻底凝固,暖气屋子里不行,糖都化了

5、山楂还可以换成橘子、苹果、圣女果、猕猴桃等任何你喜欢的东西,不过俺还是喜欢糖葫芦冰糖葫芦 <wbr> <wbr>那些记忆深处的美食
