五仁辣酱(数一数,凑够五样)


 

原料:黄豆酱一小碗、辣椒酱适量、牛肉一块、葱姜适量、花生、黑白芝麻、核桃、杏仁适量、花生油、鸡粉、香油、糖等

做法:牛肉放料理机搅拌成肉馅,加入少量淀粉和料酒搅匀备用

葱姜切末备用

准备熟的花生仁和熟的黑白芝麻、核桃和杏仁,如果是生的,要先放锅里炒香

把果仁放进保鲜袋里,用擀面杖擀碎

锅里放两大勺花生油,烧热后放入牛肉馅翻炒,肉馅炒白后,加入半勺料酒,一点胡椒粉,再加入葱姜炒香

加入一小碗黄豆酱,小火咕嘟,不断翻炒,防止糊锅

加入适量的辣椒酱提味,再加入擀碎的果仁不断翻炒,加入一勺糖,一点香油和鸡粉调味

翻炒均匀即可出锅~~~

 

注意:牛肉馅可以换成猪肉,若是吃素可以不放肉,都很好吃

我准备的果仁都是熟的,否则要放锅里炒熟或是放烤箱或微波熟也可,因为熟的果仁更香

果仁最好是擀碎的,这样吃起来有果仁的颗粒,很香,觉得咯牙的,直接打成粉吧[转载]五仁辣酱 <wbr> <wbr> <wbr>有果仁的牛肉辣酱

 

油不能放太少,酱就是要用油慢慢炒香的~~~炒酱时要小火,并不断翻炒,防止糊锅

加入适量的辣椒酱会让酱的味道更好~~~

加入糖让酱的味道更柔和,还能提鲜

全程不放一滴水,小火慢慢炒酱,这样炒出的酱不但香,还不容易变质

装瓶时,记得瓶子要干净,无油无水,要是想保存更长时间,装瓶后,最上面用一勺熟油封住,冰箱里放好久都不会坏~~~
