昨天监考了,所以没发博文,有的童鞋别心急啊糖醋肉段 <wbr> <wbr> <wbr>如何调出味美、色也美的糖醋汁,周末出了趟门,收获良多,心得有三:1、我这样的人是不适合出门的,回来后好几天都打不起精神。2、你平时羡慕的那些人和事,其实完全不是你想象那样,飞鸟和鱼是两个世界~~他有他的风光,你有你的快乐。3、金窝银窝不如自己的狗窝舒服。

糖醋肉段 (如何调出味美、色也美的糖醋汁)

 

原料:里脊肉、葱、姜、蒜、淀粉、番茄酱、盐、鸡蛋、白酒、蚝油、醋、糖、芝麻等

 

做法

1、里脊肉清洗干净,切成大小适中的肉段,

2、肉段放入碗中,加少许盐,少许白酒,加入一大勺淀粉,打入一个蛋清搅拌均匀,腌制15分钟

3、锅中放油,油六成热时,将肉段下锅,中小火炸熟(时间要掌握好,不能炸过火,肉就不嫩了),捞出沥干油

4、葱姜切末,蒜切片,取一碗,碗中放入1小勺醋、1小勺蚝油、3小勺番茄酱、4小勺糖、1大勺水搅拌均匀

5、锅中留少许油,油热后放葱姜蒜下锅爆香,然后将调好的糖醋汁放入,小火熬至起泡,将炸好的肉段放入,翻炒,使肉段上面沾满糖醋汁,然后关火起锅,撒少许熟芝麻即可

 

小贴士:

1、要想炸出的肉段入味,要事先放些白酒和盐腌制,要想炸出的肉段嫩,放入蛋清和淀粉

2、炸肉段的时候,一定要掌握好火候和时间,火太大容易将肉炸焦,时间太长,肉就炸干了,口感不好

3、1小勺醋、1小勺蚝油、3小勺番茄酱、4小勺糖、1大勺水的比例混合,做出的糖醋汁味道好色泽也好

4、糖醋汁下锅后,要小火熬至起泡,这样的糖醋汁更粘稠,肉段下锅后可以均匀沾满料汁
