最近的天真的好舒服,我就喜欢阴天和下雨(心里阴暗啊),每当大太阳升起的时候,我就祈祷能飘一片乌云遮住它(日光敏感性皮肤伤不起绿豆酥 <wbr>VS <wbr>柚子酱饼干 <wbr> <wbr> <wbr> <wbr>夏日最爱伴手礼),监考、监考~~暑假、暑假,最近俺们聊得最多的就是这些吧(不是还有天涯明月刀咩绿豆酥 <wbr>VS <wbr>柚子酱饼干 <wbr> <wbr> <wbr> <wbr>夏日最爱伴手礼)~~~为何总是一种莫名的伤感,花开花落人聚人散…

 

绿豆酥 <wbr>VS <wbr>柚子酱饼干 <wbr> <wbr> <wbr> <wbr>夏日最爱伴手礼

 

 

我好久都没有碰烤箱了,某一天心血来潮,就做了两种,送给朋友的夏日伴手礼,想来想去还是做绿豆酥应景,清热解暑,这个方子里的油很少,吃起来比较清爽绿豆酥 <wbr>VS <wbr>柚子酱饼干 <wbr> <wbr> <wbr> <wbr>夏日最爱伴手礼

 

原料:

水油面:中筋粉100克、糖10克、水45克、猪油13克
油面:低筋粉80克、猪油35克
馅料:绿豆、白糖

蛋水:蛋黄:水=1:1,混合

 

绿豆馅做法:

1、绿豆用清水浸泡一夜,然后冲洗几次

2、绿豆加入适量水放入压力锅压烂

3、将绿豆水滤出(这个别浪费,加点冰糖好好喝),绿豆里加入糖,用勺子碾碎

4、锅中不放油,将绿豆放入小火炒,直到绿豆馅水分变少,抱团粘稠为止,然后分成大小适中的团状

包酥步骤:

油面和油酥面包上保鲜膜醒制20分钟

水油面分成22克一个剂子,油面分成15克一个小剂子(油面:油酥=6:4)

用水油面包住油面,进行擀制,成长舌状,卷起来

盖上保鲜膜松弛10分钟

再进行第二次擀制,重复上次动作

再次盖上保鲜膜松弛10分钟(松弛很重要,加强面团的延展,避免破酥、漏酥)

松弛好的擀成片状,叠三叠,再擀薄,包上馅料,团圆

包好馅的酥皮胚子,盖上保鲜膜松弛10分钟,然后刷一层蛋水

烤箱180度预热,中层30分钟

 

注意:

煮绿豆的时候,尽量避免用铁锅,防止绿豆氧化

用中筋粉调水油面,低筋粉调油面,可以达到良好的分层效果

夏天猪油的量要比冬天少放些,因为猪油很容易就融化了

调好的水油面与油面的软硬度应该是一致的,延展性好

包酥都是以水油面包住油面,其比例一般为3:2(水油面:油面)

卷酥皮的过程中,每一步最好盖保鲜膜松弛几分钟,增加面皮的延展性,不容易破酥

柚子酱饼干(一种柚子的清香和微苦,我反正是很喜欢绿豆酥 <wbr>VS <wbr>柚子酱饼干 <wbr> <wbr> <wbr> <wbr>夏日最爱伴手礼) 


绿豆酥 <wbr>VS <wbr>柚子酱饼干 <wbr> <wbr> <wbr> <wbr>夏日最爱伴手礼


 

原料:低粉120克、糖粉25克、大喜大柚子酱30克、黄油40克

做法

1、黄油融化,加入糖粉,稍微打发

2、加入柚子酱,筛入低粉,保鲜膜覆盖放冰箱冷藏半小时

3、拿出后擀成薄片,用模具压型,烤箱180度10分钟
