梅菜扣肉(一煮二煎三蒸做出肥而不腻)

 

原料:五花肉、梅干菜、生抽、老抽、冰糖、八角、桂皮、葱姜、盐、油、白酒等

做法:

1、梅干菜浸泡一夜,清洗几次去掉泥沙,葱切段、姜切片备用

2、五花肉清洗干净后,加入葱姜、桂皮、八角、几滴白酒,放入砂锅中,大火烧开转小火,炖煮20分钟,拿出后趁热抹上少许的老抽

3、锅里抹薄薄一层油,将肉皮向下放入锅中,小火慢慢煎烤,直到肉皮颜色金黄,油脂溢出,将肉块四面都煎制一下至上色

4、靠出的肥油撇出,泡好的梅菜放入锅中,倒入刚才煮肉的肉汁,加入生抽、少许盐、酱油和适量冰糖调味,小火焖煮15分钟

5、煎好的肉稍凉后切成片,肉皮向下,均匀排在饭碗中,上面铺上梅菜,放入高压锅中蒸制

6、20分钟后放气开锅,将蒸出的肥油滤出,接着放入蒸制20分钟,蒸好的肉再次将肥油滤出

7、找一菜碟,倒扣即可

 

小贴士

1、梅干菜要提前浸泡,清洗干净去除泥沙

2、煮好的肉趁热拿出抹上老抽

3、煎肉的时候要肉皮向下,小火煎制防止将肉煎糊

4、梅菜要焖煮15分钟,使梅菜吸入更多汤汁,更入味更软烂

 

让扣肉入口酥烂、肥而不腻的窍门就三步:

一煮二煎三蒸

 

一煮,煮的时候,部分的肥油融入汤中,尤其是葱姜、八角等佐料的加入,去腥提香减少了肥腻感

二煎,几乎不放油的锅子,肉皮先向下,小火慢慢煎出多余的油脂,减少了油腻感

三蒸,高温蒸制,梅菜吸收了一部分肥油,多余的油脂也受热融出,前后要两次撇出多余的肥油,做出的扣肉才能入口酥栏、肥而不腻
