梅干菜蒸排骨(最好吃的蒸排骨做法)

 

原料:肋排、梅干菜、蒜、生抽、料酒、糖、盐等

做法:肋排斩开,清洗干净,备用,烧锅开水,将排骨下锅焯一下,去除血沫和杂质

梅干菜用清水浸泡半天,清洗几次去除泥沙,撕小片备用

锅里放少量油,放一勺蒜末下锅爆香,然后将排骨放入锅里翻炒,加少许料酒去腥

加入少量生抽翻炒均匀,放入梅干菜一起翻炒,加少许盐和少量糖

翻炒均匀后出锅,将排骨和梅干菜一起放入一个大碗里

上屉蒸1个小时,等排骨酥烂即可

注意:

排骨一定要事先焯水,否则杂质太多影响口感

梅干菜一定要浸泡后清洗几遍,防止有泥沙

我家的梅干菜有咸味,所以后来放的盐不多,也有的没咸味,那就多放点盐

加入少许糖可以提鲜

原料:土豆仔、脊骨、葱姜、八角、老抽、白酒、糖、盐等

做法:土豆仔清洗干净,刮皮备用(刮这个皮确实让我崩溃啊)

排骨在开水里焯一下,去除血沫和杂质

电饭锅里放适量热水,下排骨进去炖煮,加入一个八角、葱姜,适量白酒

等到排骨炖到七八成熟,加入适量老抽和盐,再加入少许糖,放入土豆一起烧

等到汤汁收干,土豆炖烂即可
