太后不愧是太后啊~~~,大妈中的战斗机脆皮炸鲜奶 <wbr> <wbr> <wbr>奶香浓郁的小点心,这老太太昨天拖着我逛了一天,从早上八点出门到下午五点回家,不休不眠走了六七个小时,我都要累瘫了,人家还是那么精神,和早上出门时一样精神,我是真服了,您是吃了嘛东西还是没吃神马东西才能练出这体格啊脆皮炸鲜奶 <wbr> <wbr> <wbr>奶香浓郁的小点心

脆皮炸鲜奶(5个小窍门轻松自制)

 

原料

牛奶250克、白糖35克、玉米淀粉30克、炼乳1大勺、低筋粉100克、清水120克、泡打粉1/2小勺

做法:

1、牛奶中加入白糖、淀粉、炼乳搅拌均匀,倒入锅中,小火加热

2、等到锅子温度上来时,用勺子或铲子不停搅拌,搅拌成粘稠的糊状,直到水分蒸发得差不多,感觉奶糊具有一定硬度时即可关火

3、将奶糊装进容器内,放入冰箱冷藏室(我是放室外了,这个天,室外和冰箱冷藏一个温度脆皮炸鲜奶 <wbr> <wbr> <wbr>奶香浓郁的小点心)1个小时

4、将凝固的奶糕切成小块,面粉中加入泡打搅拌均匀,分几次加入清水,搅拌成无疙瘩的粘稠糊状

5、锅中油烧至六七成热转小火,将奶糕放入糊中均匀蘸一层,然后放入油中,慢慢炸,等到外皮炸脆时即可捞出沥干油

 

不是窍门的窍门:

1、加热奶糊时,要小火慢慢和、搅拌,防止奶糊扒锅,等到奶糊很粘稠时即可出锅,等到凉了后就是结实的固体

2、现在这个温度,无需将奶糊放入冰箱冷冻,室外或冷藏一小时就很结实了,炸的时候不会化也不会散

3、将奶糊放在自己喜欢的模子里,最好在模子表面覆一层保鲜膜或是刷一层油,取的时候好取

4、调面糊的时候,最好用低筋粉,用普通面粉炸没有低筋粉来得脆,加水的时候一点点加,调成黏稠的面糊

5、油热后转中小火慢炸,火急了容易炸糊,吃的时候要趁热吃,凉了就不脆了
