圣诞节保留糕点:曾祖母的苏格兰油酥饼 <wbr>Grandma <wbr>Thomas <wbr>Shortbread

 

油酥饼Shortbread起源于12世纪的苏格兰,主要由面粉,黄油,糖和水构成。在物资匮乏的年代,油酥饼常作为奢侈品出现在圣诞节,新年或婚礼场合。虽说现在已不属于奢侈品,油酥饼依然成为西方圣诞节的保留糕点。

 

婆婆的祖辈移民自苏格兰,油酥饼向来是她们家圣诞节最受欢迎的糕点之一,且一直沿用已有100多年历史的祖传的托马斯曾祖母Thomas Grandma的老方子。

 

去年圣诞节探望病中的婆婆时,婆婆还硬撑着病体给我们准备了各种圣诞点心,包括著名的油酥饼:外表平实朴素,口感扎实,带奶油香和含蓄的甜味,一试即难以忘怀。

圣诞节一天天临近,节日的气氛也日益浓烈。

 

突然间,特怀念婆婆做的油酥饼 。可惜,年年岁岁花相似,岁岁年年人不同。今年的圣诞节已没有婆婆的存在了。

 

非常后悔去年看婆婆时没向她要祖传秘方。上网到处搜寻油酥饼方子,罗罗总总倒是不少,但没找到一个跟婆婆做的相似的。正气馁中,Jim提到了公公的电脑里好像有婆婆的菜谱。大喜,赶紧打电话给公公。拿到方子后,如获至宝,即刻进厨房做了开来。

 

油酥饼做法非常简单,相当零失败。很适合新手。

 

油酥饼的形状可方,可圆,可薄,可厚。但是,我执意认为,既然是做婆婆的祖传方子,做出的形状也必须跟婆婆的一样:长条状的,厚实的象砖块的,吃起来特磨牙,特令人满足的那种。不过,因为想念逝去的婆婆,还是另外用模子压出了几颗心,以表思念和敬意。

【材料】
软化黄油1磅,鸡蛋4个,2.5杯糖粉,一小勺泡打粉,两小勺香草精Vanilla extract,1/2小勺盐, 8杯普通面粉(我加了2杯全麦面粉)重量转换请参考博文“厨房度量工具及换算

【做法】

1. 烤箱预热150度/300F。室温软化了的黄油用电动搅拌机搅打至滑润。

2. 一杯杯的把糖粉加入黄油,一边加一边搅拌。

3. 鸡蛋一个一个地加入黄油,一边加一边搅拌。

4. 面粉,泡打粉和盐混合。

5. 面粉一杯杯地加入黄油,一边加一边搅拌。

6. 和成面团。

7. 放抹了油的烤盘压成1.5厘米左右厚的面块。

8. 把面块倒在抹了油的烤盘上。

9. 用勺子柄在面块上压出花纹。

10. 放入烤箱烤30分钟。拿出后趁热切成块状或自己喜欢的形状,再放回烤箱,继续烤30分钟。拿出晾凉。

晾凉的油酥饼表面可再撒少许糖粉。油酥饼做磨牙点心,饭后甜点,甚至早餐都不错。
