节日喜庆花环面包:肉桂环 <wbr>Cinnamon <wbr>Ring

 

刚过完感恩节,市政府,大公司,购物城的圣诞装饰就争先恐后出来亮相了。圣诞节上倒计时了呢!

 

话说我们家超爱肉桂卷(方子点这儿),为了满足刁嘴的家人,肉桂卷的方子尝试过不下5种。这天女儿又提醒了:"Mom, 好久没吃肉桂卷了哦!”

 

刚好看到美国烘培老师Ciril Hitz的料理书"Baking Artisan Pastries & Breads" 有一款肉桂面包,外形像个大花环,特吸引眼球。嗯,不如做这款肉桂花环面包,既饱了口服,又应了节日气氛!

这款肉桂面包不仅外形奇特,面团制作也与之前介绍过的方子大相径庭。

 

之前介绍的方子使用小苏打和泡打粉快速发酵,现发现做,相当快捷。Ciril的方子则使用发酵粉低温发酵,用的黄油相对较少,更健康。虽然耗时长,但经过低温发酵的面粉充分膨胀转化,更美味,而且成品也不会残留泡打粉的苦味。

 

如果前一天晚上把面活上,放入冰箱冷藏,第二天一大早把面团拿出,便好操作了。烤出来刚好做早午餐Brunch,也相当方便哈!

 

节日喜庆花环面包:肉桂环 <wbr>Cinnamon <wbr>Ring

 

基础甜面团方子Basic Sweet Dough:

 

【材料】

牛奶Whole Milk 365g/ 1.5杯, 鸡蛋 50g/1个, 香草精1勺, 面包面粉Bread Flour 51/4 杯 660g, 发酵粉Instant Yeast 13g/3小勺, 糖Sugar 70g/ 1/3杯, 盐Salt 13g/ 1.5小勺, 半个柠檬皮丝Lemon Zest, 冷藏无盐黄油Unsalted Butter 70g/ 5大勺

 

【步骤】

1. 牛奶和鸡蛋放室温回暖后混合。面粉,发酵粉,糖和盐搅拌均匀,加入牛奶,鸡蛋,柠檬丝,搅拌成团。

2. 黄油放入塑料袋,用擀面杖拍打成薄片。

3. 一边揉面,一边小块小块地加入黄油,每次都要把黄油揉匀了再加下一块。

4. 面团揉到光滑呈扩展状态后,放入抹了油的小盆,发酵至两倍大(约2小时)。把面团拿出,放入垫了烘培纸的烤盘,压扁成长方形。盖上塑料薄膜,入冰箱冷藏过夜。

肉桂馅料配方Cinnamon Bun Filling:

软化黄油Unsalted Butter 20g/1.5大勺(刷面片用) , 红糖Light brown sugar 120g/ 半杯, 肉桂粉ground cinnamon 11g/4小勺, 面粉Bread or all purpose flour 10g/1大勺

【步骤】红糖,肉桂粉和面粉搅拌均匀。

糖霜配方Sugar Glaze:

牛奶Whole milk 35g/2大勺, 玉米糖浆light corn syrup 10g/1大勺, 糖粉powdered sugar 150g/ 11/8 , 香草精少许,全部混合。

蛋液Egg Wash:

鸡蛋2个100g, 蛋黄1个25g, 盐少许

 

【面包制作】

【面包制作步骤】

1. 烤箱预热170度/340F。 面团在案板上压成宽约四十厘米厚约6毫米的长方块。

2. 把软化的黄油刷在面皮上,离自己远的长边留两厘米不刷。

3. 撒上肉桂馅料。

4. 从离自己最近的长边开始卷起,把面皮卷成长条。

5. 把我面皮卷两个接口抹少许蛋液,相接。

6. 用剪刀每两厘米剪一个口子,注意手下留情,不要剪断了,里圈大约留下一厘米不要剪到。

7. 用手把剪出的“花瓣”朝一个方向稍拧一下,往外拉。面包盖上湿布,二次发酵至两倍大,约45分钟左右。

8. 面包表面抹上鸡蛋水。放入烤箱烘烤25-30分钟。

9. 拿出稍凉后,抹上糖霜。

【小Tips】

1. 肉桂馅料里的黄油可以刷在面皮上,再撒上肉桂粉;也可以把黄油事先与其他肉桂馅料混合,再抹在面皮上。

2. 抹肉桂馅料时,注意留一条小边不要涂抹,卷成卷后更易粘合。

3. 做糖霜时,注意不要一次把牛奶全部加完,最好留一点。万一太干,可以往里加几滴水。

4. 淋糖霜时,要等面包凉得差不多再淋,否则糖霜容易化掉,出不了花纹哦。
