明眼人一下就看出,这个做法来源于“文怡”姐的那个炸弹,所以在此衷心感谢,吃水不忘打井人~~

做的时候,手忙脚乱拍了几张,就存在文档里,直到现在~~~~

它顶了本来今天属于红烧肉的位置,哈哈哈,红烧肉改天再发吧~~~~~

焦溜丸子(尝试下另类版蛋丸)


 

原料鹌鹑蛋、肉馅、老豆腐、胡萝卜、木耳、姜、料酒、蚝油、生抽、盐、香油、糖、醋、水淀粉等

做法

鹌鹑蛋洗净放锅中加热煮熟,迅速放冷水中过凉,剥皮后备用

豆腐用纱布包着挤压,将其中的水分压出,胡萝卜和木耳一部分切碎备用,另一部分切成块

肉馅里放入葱姜末,加入料酒,生抽,盐和香油,打入两个鹌鹑蛋,加入木耳碎和胡萝卜,沿着同一个方向搅打上劲

豆腐渣倒入肉馅中,搅拌均匀

挖起一勺肉馅,压成一个小圆饼,将鹌鹑蛋放入,团成丸子的形状

取一碗,放入葱姜末、生抽、少许醋、蚝油、适量盐和白糖,加入一勺水淀粉调成料汁

锅里放油加热至6成热时,放入鹌鹑蛋丸子,炸到外皮金黄捞出沥油,重新入锅复炸一遍

锅里油倒出,放葱姜下锅煸香,接着放入木耳和胡萝卜下去翻炒

将事先调好的料汁倒入锅内,放入炸好的丸子

炒匀出锅即可享用~~~~~~~~~

 

注意木耳碎和胡萝卜碎不能放太多,否则会影响丸子的成团性

打上两个鹌鹑蛋是为了让肉馅更有粘度,口感更嫩滑

豆腐里的水分一定要去除,否则做好的丸子会散开,下油锅后不成形

团丸子的时候可以放一小块保鲜膜,不会弄脏手~~~

鹌鹑蛋上不要有水,否则滑溜溜的不好粘肉馅,如果实在觉得不好操作,可以滚上一层干淀粉再包,肉馅就不会脱落了

要想做出焦香的感觉,肉丸要下锅复炸一遍~~颜色也会加深

出锅后还可以撒点香菜
