    这几天几乎天天下雨，空气湿度达到了90%！天气闷热，气压低，有时候感觉在蒸桑拿，这就是江南典型的梅雨天气！关于为什么叫梅雨，一来空气湿度大，器物易霉，故称“霉雨”，简称“霉”；二来又值江南梅子黄熟，亦称“梅雨”或“黄梅雨”。典型的梅雨季节比较漫长，从六月中下旬开始要到7月上旬才出梅。

    在梅雨季节，要学会调整心态，最重要的是不要让天气影响了心情。有句话说，夏属火，其七热。阳气之盛，湿气之重，易使人急躁，时间久了自然会伤神。所以大家要控制好自己的情绪，别着急上火http://www/uc/myshow/blog/misc/gif/E___6725EN00SIGG.gif！

    今天tony和大家聊聊梅雨季节的“食”。黄梅季节，食物特别容易变质。为了避免“病从口入”，我们在平时的生活中要注意菜要烧熟烧透，尽量每餐做的食物一餐吃尽，实在吃不了的也要及时冷藏，以免高温高湿的环境下食物变质。冷藏的食物重新烹调的时候，也一定要烧熟烧透。另外，少吃凉菜，尤其要少吃荤性的凉菜，因为这些荤性凉菜就是细菌的良好培养基。

    那么梅雨季节应该多吃什么呢？既然梅雨期间多湿热，自然要吃一些健脾利湿的食物，比如苡仁，水芹，高梁，玉米，扁豆，冬瓜，洋葱，马齿苋，鲫鱼，田螺等等，今天给大家推荐笋干老鸭汤。夏季多喝老鸭汤可以除湿解毒滋阴养胃啊。我们主张夏日饮食要清淡，是指做菜的时候要少放油，多吃一些清爽的菜肴，但不是说不吃荤的，夏天里多吃点老鸭肉真的可以保健身体，增强抵抗力啊。

原料：老鸭   咸笋干

调料：料酒   生姜   枸杞   盐

做法：

1.鸭子宰杀后去鸭屁股，切成块再次冲洗掉多余的血水；

2.锅中把水煮开后放入鸭肉焯水；

3.倒掉锅子里的水，重新把鸭肉冲洗一下；

4.笋干先洗一下，用水浸泡20分钟；

5.把笋干切断；

6.把焯水后的鸭肉放入高压锅；

7.加水没过鸭肉(想多喝汤可以适当多加点水)；

8.加入几片生姜；

9.加入笋干；

10.加入两勺左右的料酒；

11.盖上锅盖大火煮到高压锅发出扑哧声改小火继续煮30分钟后关火焖半个小时。

12.打开盖后开大火，放入枸杞煮两分钟就加盐调味即可出锅。

好喝的老鸭汤的5个秘密：

1.鸭子一定要选用一年以上的老鸭，当然最好是两三年的土鸭，冷冻的鸭子不推荐啊；

2.鸭子有膻味，记得一来要剪去鸭屁股，二来要焯水，这是关键，否则你加再多的料酒和生姜都去不掉味的；

3.传统的鸭汤都是说要煲好几个小时，饭店里的说法更夸张，有的甚至说要十几个小时，这样的鸭汤味道浓了，营养几乎也没了，现代人没有那么多时间折腾，再者也没必要，高压锅的好处在于很容易把老鸭炖酥，而且营养流失的非常少；

4.笋干是咸的，为了降低咸度，可以先清洗浸泡一下，大概20分钟即可；

5.既然是喝鸭汤，不要放很多乱七八糟的调料以免毁了一锅汤，不过可以根据自己的体质放入下列一样食材和鸭肉一起炖，比如苡仁，绿豆，冬瓜，海带，沙参等食材，更加滋补啊。

正宗的老鸭是不会那么油腻的，鸭子多活动，要经常下水，不像鸡，关着喂养就行，江南的土鸭是一定要下水的，否则不会成活，这就是为什么江南人夏天喜欢做笋干老鸭汤，营养健康啊。
