【材料】全蛋3个 低粉100克 白糖75克 黄油25克

2、将盆移开热水,改用电动打蛋器先快速搅打,然后慢速搅打;

3、打好的蛋糊表面可以划出痕迹就行;

4、取1/3的蛋糊加入过筛的粉里搅拌均匀,然后将剩下的蛋糊全部倒入粉中搅拌均匀;

5、将黄油隔水溶化,然后加入拌好的粉里继续搅拌均匀;

6、6寸的蛋糕模具内抹上黄油,然后放入冰箱冷藏10分钟后取出,将面糊倒入模具内,用力振出气泡,然后放入烤箱内烤制。

7、烤箱温度180°,中层上下火,时间15分钟。

8、取出后倒置在烤网上待冷却后倒出蛋糕即可。

Tip:
1、开始时,要在热水上将白糖全部溶化后在离开热水开始搅打鸡蛋;
2、搅拌蛋糊时,左手不停的转动盆子,右手从小往上翻动面糊,不要像搅拌肉馅那样的旋转式搅拌,而要上下翻拌。
