素食泰式茄子罗勒九层塔 |

I love brinjal and could eat it in any cooking form, this recipe
was made last summer when my thai basil was growing like there were
no tomorrow... its tasty and goes very well with steamed rice!

材料:
2条中国茄子
1 把 泰国罗勒(九层塔)
3-4 只 青辣椒
3 瓣 蒜瓣儿
2 小勺 鱼露 (或酱油)或适量
1/2 小勺 糖
Ingredients:
2 Chinese Brinjal (Long shape)
1 cup of thai basil leaves (Or more if desire)
3-4 Thai
3 Cloves of garlic (slice)
1 tsp Fish Sauce(Or Soy sauce)
1/2 tsp Sugar
1. 把茄子切滚刀块、罗勒摘好、辣椒切条状。不喜欢辣的,可以把种子去掉,蒜瓣儿切片备用。
2.
在一口锅子里,倒入大约2茶匙的油,把辣椒和蒜瓣儿下锅煸香后把茄子块加入翻匀。加盖中火焖大约五分钟,至茄子变软就好。
3. 茄子煸好后,加入鱼露和糖调味,再次翻匀后加入罗勒(九层塔)翻匀就可以起锅了。
1. Cut the brinjal into wedges.
2. Heat a cooking pan at high or medium high heat, I preferr using
cast iron pan as it cooks the brinjal well and keeps the beautiful
purple colour intake.
3. Add about 2 tsp of cooking oil, add the garlic and chilli and
cook until fragrant.
4. Add the brinjal and cover with lid, cook at medium high heat for about 5 minutes, turn once or twice in between.
5. Season the brinjal with fish sauce/soy sauce and
sugar,
Serve warm with steamed rice.
