我不是个小气的人,从小爹娘给我灌输的是一种“吃亏就是占便宜”的思想,所以我不会和任何人去计较什么,但无所谓却不代表我就是个傻子,或许我比其他人还要更聪明吧,某些人某些事我心里跟明镜似的,不点破是还能忍耐,忍耐不了的时候可不就要火山爆发一次(你想憋死我啊自制爽口辣白菜 <wbr> <wbr> <wbr>附辣白菜12种美味吃法

某天晚饭,我发疯一样想吃辣白菜,可惜啊,大晚上的好冷啊,不能出去买自制爽口辣白菜 <wbr> <wbr> <wbr>附辣白菜12种美味吃法,第二天我就决定自己动手了,今年我家后院的白菜大丰收啊,也算是自产自销了,自己做的还更卫生,哪一天我吃不上饭了,估计会到街上卖辣白菜去自制爽口辣白菜 <wbr> <wbr> <wbr>附辣白菜12种美味吃法

 

 

原料:

白菜2颗、梨1个、苹果1个、白萝卜半根、大蒜1头、姜1块、虾酱1大勺、鱼露1大勺、糯米粉35克、盐、糖和清水各适量

 

做法:

1、大白菜撕去表面的几层,两刀四块,在每一层白菜叶子上均匀撒上盐,腌制一天一夜后,杀出水分,用清水漂洗一下,攥干

2、白萝卜、苹果、梨分别擦成细末,姜蒜剁碎,韭菜切段备用,用350克清水溶解35克糯米粉,开火小火慢慢熬煮,直到糯米水变成微稠浆糊状关火

3、糯米浆稍凉后加入辣椒面,加入擦好的萝卜、苹果、梨,加入姜蒜,加入虾酱和鱼露,加入韭菜段,加入2小勺盐和1大勺白糖,最后搅拌均匀即可

4、腌好的白菜上均匀涂抹制好的辣椒酱,上面覆盖保鲜膜或盆子,发酵一周即可

 

小贴士:

1、各家做辣白菜的材料都不同,我们习惯加入梨,不喜欢加胡萝卜、洋葱和白芝麻什么的

2、我用的辣椒面是网购的,专门做韩式辣椒酱或泡菜的,颜色很红但是没有多少辣味

3、糯米浆的作用是为了更好溶解辣椒粉、增加辣白菜的风味,加快发酵等,如果图省事可以用大米粥来代替

4、 做好的辣白菜一般3天就可以吃了,但发酵一周后味道更好

5、做辣白菜没有什么难度,但要注意这个和中式泡菜是一样的,所有的容器和操作过程中不能沾油,否则很容易就坏掉,不利于保存
