主料:鲜红辣椒4斤

制作方法:
1、辣椒洗净,晾干表面的水分,去蒂。

2、青蚕豆去皮焯水晾凉,苹果、梨去皮、去核浸在淡盐水中防止变色。

3、各种原料分别用食品加工机打碎,备用。(芝麻除外)

4、将打碎的原料放入盆中,加6调羹盐、一调羹味精,搅拌均匀,腌制1小时,中间翻动几次,均匀入味。

5、装瓶,瓶口留一定空间,发酵过程中辣酱体积会有所增大,在辣酱的表面,倒入适量白酒封口,加盖在室温下放置2天后将盖拧紧,放入冰箱中冷藏保存,一周以后即可食用。
