肥牛,在印象里一般都是涮火锅才能用的到,其实不然,很多的中餐热菜里也能用到肥牛这个食材,像什么葱爆牛肉呀、石锅肥牛、干煸肥牛呀,都会用到这个食材,今天我就给大家带来一道《石锅肥牛》,已经进入冬季,相信大家能够喜欢这热气腾腾的石锅菜,好了话不多说上菜谱。

如果“肥牛”真的是“放在热锅里食用的牛肉”的话,石锅肥牛的吃法或许算是比较地道的。上桌的时候热腾腾的石锅,里面嫩嫩的牛肉加上腐竹,伴随着滋滋响的香气,牛肉事先炒出来很入味,黄瓜条也很是爽口鲜嫩,另外还有火锅底料特有的酱料,味道相当好。在冬天一个人的午餐,搭配一碗米饭,不对,这么好吃的肥牛,得两碗米饭了,吃的即暖和又舒服。

主料:肥牛、腐竹、黄瓜
辅料:盐、生抽、大蒜、姜、辣皮子、火锅底料、香葱、胡椒粉
做法:1、把腐竹用凉水泡软洗净,黄瓜洗净切条,下开水里焯水捞起

2、大蒜、姜切末,香葱切段,辣皮子泡泡切段

3、热锅凉油,油热7成下,葱、姜、蒜、辣皮子炒出香味,加火锅底料炒出红油

4、加腐竹、黄瓜大火翻炒均匀

5、加肥牛大火翻炒变软

6、加开水、生抽、盐大火烧开,加胡椒粉,把石锅烧热,把肥牛连汤汁一起倒入

7、热锅凉油,加香葱头炸出香味倒进肥牛上面、撒上香菜即可
