今天是复活节,是纪念耶稣基督在十字架受刑死后复活的节日,西方信基督教的国家都过这个节。每年过春分月圆后的第一个星期天为复活节。传统的复活节会有兔子,巧克力彩蛋,热十字面包,今天就做个兔子喜欢吃的庆祝复活节吧,胡萝卜杯子蛋糕。这个蛋糕料可不是一般的足,有胡萝卜,苹果,核桃,葡萄干,加上肉桂的香味,吃一个就饱了,营养健康,还好吃。热乎乎出炉的时候吃上一个感觉就像大冬天喝上一杯热奶茶,享受啊。方子是从外国网站上看来的,我感觉他放的糖和油太多,都减了一点量。做出来就一个感受,外国人太会吃了!
准备材料:(方子来自joyofbaking.com)
2 cups (260
grams) all-purpose flour,1
1/2 teaspoons baking soda,1/2 teaspoon salt,1 1/2 teaspoons ground cinnamon

large eggs,1 cup (200 grams) granulated white sugar,1 cup (240 ml) safflower, corn, or canola
oil,2
cups (210 grams) finely grated raw carrots
,1 cup grated apple (approximately 2
large),1/2 cup (55 grams) pecans or walnuts,
coarsely chopped,1 cup (100 grams) raisins or
currants
260g低筋面粉,1 1∕2 茶匙苏打,
1∕2茶匙盐,1
1∕2茶匙肉桂粉,四个大鸡蛋,200g糖(我用160g),200ml无味植物油(我用180ml),200g胡萝卜(一根中等大小的),100g苹果(半个),50g核桃,100g葡萄干
准备工作:胡萝卜,苹果擦丝,葡萄干用水泡半个小时,核桃切碎用烤箱100℃烤十分钟
开始制作:
In a separate bowl
whisk together the flour, baking soda, salt, and ground
cinnamon.
In another large
bowl whisk the eggs, sugar, and oil until slightly thickened. Fold
in the flour mixture until incorporated. With a large rubber
spatula fold
in the grated carrots, grated apple, chopped
nuts, and raisins. Evenly divide the batter between the 20 muffin
cups and bake about 20 minutes or until a toothpick
inserted in the center of a cupcake comes out
clean.
Remove from the oven
and let cool completely on a wire
rack. Cover and refrigerate the
cupcakes until serving time.
1.低筋面粉,苏打粉,盐,肉桂粉混合过筛。
2.把全蛋加入糖坐在热水盆里打发。
3.加入油,擦好的胡萝卜和苹果,葡萄干,核桃碎。
4.用橡皮匙子用从下往上翻拌的手法搅拌均匀。
5.装入马芬杯,可以用个冰激凌勺,这样每个里面的量是均匀的。
6.放入到预热好180℃的烤箱烤焙,中层上下火,大约二十分钟,把一个牙签插入蛋糕再拔出上面没有残留物就代表烤熟了。

蛋糕里长出两根胡萝卜O(∩_∩)O,好吃!
