虽然世界上的甜品早已流通广泛,但我们现代所熟知的并广受喜爱的法式甜品其实是近年来经过改革后的“现代甜品”,即使是已有了高端甜点文化的法国,仍不断的追求极致,此即为“新甜点”。另外,就算想创新,也是要尊重经典而不能随意篡改,必须在原有的结构上精细,否则就不能成为经典,这是法式甜点师的基本常识与尊重!
