This spicy oven baked "fried" chicken is a real treasure I found from a Chinese website, I can't really remember the original recipe anymore. I whipped up this version using the method I remembered from reading the recipe earlier. It turned out sooo yumm!
I particularly love the way it was made without a drop of oil and still turned out to be crunchy, just the way I liked my fried chicken to be!
4-6块 Chicken Thigh/鸡腿
1 小勺 盐 （或是适量）
1 小勺 酱油 Optional
1 大勺 辣椒粉 （可适量减少）
1/2 小勺 孜然粉 可无
1/4 杯 玉米面 （不是玉米淀粉，是玉米粉）
1/4 杯 硬麦/Semolina 粉 （Suji)
1/4 杯 低筋面粉
1/4 小勺 胡椒粉
2 Chicken quarter back attached cut into 4 pieces.
One teaspoon of salt (it is really to your taste)
One teaspoon of soya sauce
One tablespoon of kashmiri chilli powder (use paprika for less spicy version)
1/2 teaspoon of cumin powder
1/4 cup of corn meal meal (Makka ki Atta)
1/4 cup of Semolina powder (suji)
1/4 cup of all purpose flour (maida)
1/4 teaspoon of black pepper powder
a pinch of salt
1. First, mixed chili powder, soya sauce, spices and salt to marinate the chicken for 2-4 hours, you can marinate it overnight, it will taste even better.
2. Meanwhile, mixed together corn meal, semolina powder, all purpose flour, salt and pepper for dredging. Dredge the marinated chicken in flour and shake off excess.
3. Preheat oven to 400 F (205 C), place the chicken pieces on a oven baking sheet that allows oil dripping, place chicken skin down and bake for 22-minutes. Turn the chicken and bake for 15 more minutes until it turned golden brown.
