准备过年罗~~~~酱肉酱肉挂起来

 

本来想等肉酱好了,拍个菜,再发这个帖子的,

但是实在是问的人太多了.

那就先把过程发上来吧.

让更多朋友可以赶在年前多做点酱肉,

以后等肉晒好了可以吃了,我再拍个菜给大家参考.

 



 

第一回合:腌肉

 

以下是材料和步骤:

五花肉6条 大概8斤左右   用刀将五花肉刮干净(不要用水洗)

准备1包盐和一些香叶花椒、大料等和盐一起炒成有香味的花椒盐

用盐将每条五花肉搓一遍,再用葱和姜搓一遍;

将肉整齐的麻在盆中,压上一缸子水,放置家中卫生阴凉除,腌制3-5天。

将腌制出来的水倒掉          将肉上的杂物挑干净

在肉皮一端用刀扎一个孔穿上绳子,将肉在阴凉处晾1天,下面垫张报纸。

第二回合:煮酱
准备1200克酱油,少量茴香、桂皮、豆蔻、葱姜、干辣椒、胡椒粉、花椒 
1500克黄酒   白砂糖400克 ,将所有材料一起煮开,将糖煮溶化。
 
(这款酱肉做出来黄酒味比较重的,因为提前腌制过,所以酒比酱油的比例高,
这样不至于酱出来太咸,一般只要酱3天就可以,酱的时间长了会过咸)
 
盐腌的好处:
可以充分逼出肉中水份,使肉质口感紧实,充分的去除肉腥骚味.

第三回合:酱肉
将酱煮开5-10分钟后,关火,将酱晾凉;
晾凉后将肉码入,盖上几层保鲜膜,酱3天。
酱的时候每天记得翻下身。
酱好后捞出挂至阴凉通风处,晾晒1-2个礼拜即可。
