【黑麦核桃小餐包】——秋季养生首选面包


秋天是核桃的季节

拌菜、打浆、熬糖水的时候都会放

连做面包我也要揉一些进面团

核桃加上黑麦天然的香气

让人爱极了这款小餐包

早晨吃之前回炉一下

外脆内软

口感恰好

不时还能吃到核桃颗粒

真是令人满足

方子分享自@帅帅小厨,他改良自西川贡晃的书里的方子,我又把他的方子改了改,呵呵。

食材: 高粉320g、黑麦粉80g、砂糖20g、水270g、盐6g、 黄油15g、酵母5g、 核桃80g

做法:

1、将所有食材混合均匀,揉至扩展阶段

2、室温发酵至1.5倍大,排气后分割成16个50g的面团

3、面团上筛面粉,之后用剪刀在面团顶端剪两下

4、最后发酵至1.5倍大,放入预热220度的烤箱,中层烤13分钟
