材料:
精小肋排500g,盐1/2小勺,料酒1大勺,干淀粉1大勺;干豆豉2大勺,食用油1大勺,蒜末6瓣,姜末1小勺,葱末1小勺,糖1小勺,酱油2小勺;葱花少许,红辣椒圈少许

1、排骨洗净,用冰水浸泡两小时以上,洗净血水,沥干备用;(有时间就多泡会儿,没时间就少泡会儿。一定要泡,不泡味儿就不对了。)

2、泡过的排骨挤干水分,放入大碗,加入盐、料酒拌匀入味;再加入干淀粉,下手抓匀上浆,抓到黏黏糊糊;

3、干豆豉用清水略浸泡后捞出,沥干;

4、将豆豉略切碎备用;

5、葱姜蒜切末,蒜要多一些;再切一些绿葱花和红辣椒圈备用;

6、烧热炒锅,先不要加油,小火下入豆豉干炒至水分收干、使颜色更黑、出香味儿,再加入食用油,没过豆豉即可;

7、炒出香味后,加入大蒜末(要多一些),炒出香味儿;

8、再加入葱末和姜末,炒出香味;

10、加入酱油,炒匀;

11、关火盛出,放至室温备用;这才是味道地道的“豉汁”!

12、将放凉的豉汁加入到排骨中拌匀;

13、腌好的排骨放入耐热容器,蒸锅上汽后入锅,大火蒸15—20分钟;关火,起锅,撒上少许葱花和辣椒圈点缀,即可。
