四川“九大碗”

民间凡遇婚娶、新居落成、小儿诞生、老人寿辰等喜事,都要办一顿丰盛的酒席。旧时,除猪肉外,或鸡或羊必上满九碗主菜而得名。后来发展演变为上九道菜,依次顺序为:一、干盘菜;二、凉菜;三、炒菜;四、镶碗;五、墩子;六、膀;七、烧白;八、鸡;九、汤菜。
民间有首《九碗歌》:主人请我吃晌午,九碗摆得胜姑苏。头碗鱼肝炒鱼肚,二碗仔鸡炖贝母。三碗鲤鱼燕窝焯,四碗猪肉焖豆腐。五碗金钩勾点醋。六碗金钱吊葫芦。七碗墩墩有块数。八碗肥肉火巴漉漉。九碗清汤把口漱,酒足饭饱一身酥。
