小的时候,很爱吃蛋糕。在那个物质缺乏的年代,一听到蛋糕这两个字就两眼发光。简简单单一块小小的蛋糕已经觉得够满足,够奢侈。
长大了,尤其到了国外后,见到吃到的各种蛋糕不下百种。才知道原来蛋糕可以做得那么精美绝伦,足可以和艺术品媲美。
普普通通的海绵蛋糕就好比家常菜。样子虽然一般,但绝对好吃。

Caster sugar
Flour,soft
Salt
Butter,melted
Method
1 Place eggs and sugar in a large bowl held over a pot of hot water.
2 Whisk until the mixture is very light and fluffy.
3 Remove from the heat and continue whisking until the mixture reaches the ribbon stage(whisked mixture of eggs and sugar becomes thick enouth to hold its shape when it flows from the whisk onto the mixture.
4Sieve the flour and salt and gently fold them into the mixture.
5Gently fold in the butter.
6Pour into a greased 20cm springform tin.
7Bake at 200℃for 25-30minutes.
8Turn out and cool on a wire rack.
原料:
鸡蛋4个,白糖100克,面粉100克,盐1/4茶勺,黄油(融化)50克
做法:
将蛋和糖一起放锅里隔热水打发至蓬松并且很光亮。(这步很费力,一定要打到拿蛋糖混合物可以厚到足可以挂在搅蛋棒上)。
面粉过筛,和盐混合后。轻轻地混入刚打好的蛋糖混合物中。再轻轻地和融化好的黄油混合。
倒入涂好油了的20cm的蛋糕模具中,放入烤箱用200度烤25-30分钟。然后拿出放在金属铁架子上放凉。
最后可以进行装饰,自由发挥。我用的是打发好的鲜奶油和切碎的新鲜水果,蛋糕四周裹了些花生碎,很简单,家常就可以操作。
