巧克力的诱惑--黑森林蛋糕

为了体验刮巧克力屑的乐趣,

做了回黑森林蛋糕.

做完之后,找了一帮小朋友,大家一起分享了.

 

 

 

【黑森林蛋糕】6寸

材料:

蛋黄3个  

 白砂糖15克 

色拉油25克   

牛奶25克 

可可粉10克  

低面45克

 

 

第一部分:打发蛋白

第二部分:做蛋黄糊和混合部分

 

1 在蛋黄中加入白砂糖搅拌均匀加入色拉油和牛奶搅拌均

匀筛入低粉和可可粉切拌均匀

2 挑1/3蛋白糊到蛋黄糊里面上下前后左右切拌均匀。再将

蛋黄糊倒入蛋白糊中切拌均匀

 

3 将面糊倒入6寸活底模具中。2/3高度左右。端起模具,在

桌子上轻磕几下,震去气泡。

第三部分:烘焙与装饰部分:

 

入预热好的烤箱,160度55分钟,放下层,上下火

烤好后倒扣在烤架上晾凉,凉后脱模;先用刀插入模具四周

转一圈,让蛋糕体和模具四周脱离,后再用刀削去蛋糕底上的

模具底,蛋糕就脱模完成了;

6 用刀横切蛋糕,将蛋糕分成两片或者3片,这样可以做分层

蛋糕;

将150ML奶油打发到固体有纹路状态,这里选择的是植物

奶油,你也可以选择动物奶油,比较健康.我这里为了做夹层和

裱花,所以选择用植物的,比较稳定有型点.

取一层蛋糕体涂上一层糖酒液可以使蛋糕体湿润和稳定,

9   抹上一层打发好的植物奶油,撒上樱桃碎(最好选用酒渍

黑樱桃)糖酒液没有不涂也没关系。再抹上一层奶油。盖上

另外一块蛋糕

10 将蛋糕的外表全部抹上奶油。

11 用勺子刨巧克力屑。将巧克力屑撒在蛋糕的顶部

12 侧面拍巧克力屑有点点麻烦,我抓上一大把,用手一

点点拍上去的。

13 将剩下的奶油装入裱花袋子里面这里用是的中号的8齿

的菊花裱花嘴,在蛋糕上挤上花朵,然后每个上按上一个

车厘子。完工了。

心得体会:

1 植物奶油比较稳定,但是含反式脂肪酸;动物奶油比较健康,但是裱花容易软塌;看自己喜好吧.

2 可可粉不要加太多了,不然会有苦味;

3 蛋糕体中可以加点泡打粉小苏打.蛋白中可加点塔塔粉.

这样做出来的蛋糕样子比较好.我这里什么都没加.

4 蛋糕体我是前一天晚上烤好,然后放冰箱,第二天早上装饰

蛋糕的.这样蛋糕体有一定的硬度,不至于太软.
