相伴一生的好菜----鲫鱼豆腐汤

 

 

 

鲫鱼豆腐汤

我居然抱着这一砂锅,坐在电脑前,边吃边捂手边上网,

一个人的中午饭.

有一个朋友站内信问我,为什么她烧的鲫鱼豆腐汤是腥气的,汤不白,

我想到,信任我,才会来问我,我就应该好好对待,好好回答.

今天再拍一次这道菜的做法,与大家分享.

希望更多的朋友在家中吃道这碗鲜美不腥气的鱼汤.

 

 

 

材料与步骤:

鲫鱼1条,叫摊主杀好,回家洗干净,洗去内部黑膜。在鱼身上切上斜刀。

另准备料酒和生姜葱等。

准备嫩豆腐1块(老豆腐也可以)将锅烧热,锅中倒油,先放姜片,然后放

入鱼煎,一面煎好再煎另一边。

鱼煎至两面略焦黄后,加入料酒。再稍微煎下,然后倒入600ML热开水。滚

开后,转移到砂锅。入砂锅滚开后加入焯过水的豆腐(不焯水也没关系)。

大火煮上。

保持大火,煮15分钟,关火,调味道,放点盐,撒点香菜叶等。不喜欢可不

撒。可以吃了。

1 如何煎鱼皮不破不粘锅?:

 

归纳总结:

1:生姜擦锅一遍;

2:热锅冷油;先热锅再放油;

3: 油温7成热(油面平静,有青烟)再下锅;拎住鱼尾贴锅边放入;

4:高温可以快速凝结鱼的表皮,使原料不易碎烂;

5:鱼身擦干,两面划斜刀,鱼身拍点淀粉;

6:  一面彻底煎好,再煎另一面;

7:翻身前先轻轻摇动锅底,看看有没有粘牢.有粘牢的话,慢慢摇下来再翻;

 

2 如何才能熬出奶白色的汤:

办法1,加点牛奶即可,

办法2,将鱼煎至两面发黄,加入热开水大火熬煮15分钟,

汤汁即可浓白效果.小火出清汤大火出白汤.

 

3 鲫鱼豆腐汤的营养价值:

鲫鱼味甘、性平,入脾、胃、大肠经;具有健脾、开胃、

益气、利水、通乳、除湿之功效。

常喝这道汤可强身健体.提高人体免疫力.
