蛋黄酱不仅用途非常广泛,且种类繁多。我们用大蒜做蒜味蛋黄酱,用来抹三明治或唐緹(Tartine,唐緹:是一種法式三文治.它不像一般的三文治那樣把餡料夾在兩片麵包之間,而是把餡料放在一片法国麵包上﹐然後用刀叉切著吃。)用于烹调蔬菜或鱼类,添加多一重的美味。自己动手制作的蛋黄酱更合口味,因为你可以按自己的喜爱的味道调节用料。而且制作非常简单---我们用食物料理机制作。

材料:(成品约2杯)
·4个大蛋黄
·2 杯(500ml) 蒜油
·1tb+1ts=(20ml )鲜榨柠檬汁
·2小勺(10ml)粗盐
做法:
把蛋黄倒进食物料理机打匀,机器一边继续转动,一边很慢很慢的加油进去(如果你的料理机上面有个管子,是使用它的时候了)(注意:油一定不能一下子全倒进去,油要一滴一滴地加.这样油与水才能充分的混合.),打至乳化浓稠的状态后,加入柠檬汁和盐拌匀。装入有盖的容器,冰箱保存一个星期。

·4 large egg yolks
·2 cups garlic oil
·1 tablespoon plus 1 teaspoon fresh lemon juice
·2 teaspoons kosher salt
Mayonnaise is extremely versatile and can be flavored in any number of direction. We use aioli, mayonnaise flavored with garlic, for sandwiches or tartines, and it is also wonderful with cooked vegetable and as a condiment for fish. Homemde mayonnaise tastes better, you can control the flavor and consistency, and you can enhance it as you wish. And it's not at all difficult to do--we make it in the food processor.

Put the
egg yolks in a food processor and process to combine. With the
motor running, begin adding the oil very, very slowly(if your
processor has a tube with a small hole in the center to control the
stream, this is the time to use it), blending until emulsified and
thickened. Add the lemon juice and salt. Refrigerate in a covered
container for up to 1 week.
