奶素素食奶豆腐咖喱印度美食 |

今天介绍的这道菜是印度的奶豆腐煮豌豆,这个奶豆腐(Paneer)的制作方法和蒙古的“苏恩呼日德”相似,也很接近云南的奶饼。口感吃起来柔软,有浓厚的奶香味。
奶豆腐是印度素食里一个不可或缺的食材,是婚宴节庆的珍贵食物。奶豆腐的营养价值和一般的奶酪相似,这我就不多啰嗦了。
我偶尔也会在家里自制奶豆腐,但是工序比较麻烦,现在商店里都可以买到很好的Paneer,所以我就不再自己鼓捣了。。
Paneer is a well loved cooking ingredient
in many indian families, cooking with green peas is one of the most
common way to use paneer.
Making this dish
with
材料:
1/2 块 牛奶豆腐
1 杯冻豌豆
2 只中型番茄
1/2 只洋葱
2 只朝天椒或小青椒
1 小勺 姜蒜蓉
1 寸 桂皮 (Cinnamon Stick)
3 只 丁香
1/4 杯 酸奶 Optional
调味料:
2 小勺 芫荽粉 (Coriander Powder)

Ingredients:
1/2 piece of paneer (around 200 gms)
1 Cup of frozen peas
2 Medium size tomato
1/2 Bombay Onion
2 green chilies
1 tsp
1 inch of Cinnamon Stick
3 cloves
1/4 cup plain yogurt
Seasoning:
2 tsp Coriander Powder
2 tsp Ketchup
1 tsp Cumin Seed
1 tsp Cumin Powder
1 tsp Chili Powder
1 tsp Turmeric Powder
1/2 tsp Garam Masala
1 tsp salt or to taste
1. 把番茄,洋葱,姜蒜蓉,辣椒和洋葱搅拌成糊状。
2. 把奶豆腐切块,两面稍微煎黄。
3. 另外一口锅里加入2大匙的食油把丁香,桂皮和孜然加入煸炒香。
4. 把番茄糊倒入煮干至边上稍微泛出红油。这个时候加入除了Garam masala和番茄酱之外的所有调味料。
5. 把材料煸炒匀后把酸奶和1杯水混合,倒入锅内煮滚。加入奶豆腐稍微煮2分钟,加入Garam
masala和番茄酱。继续烹煮3-5分钟后加入豌豆,即可熄火,加盖稍微虚焖几分钟再上桌。
好吃的Matar Paneer,可以配面饼也可以配米饭吃。
1. Blend together tomato, onion, ginger garlic paste and chilies to form a paste.
2. Brown paneer pieces (cute in1 cm cubes) set aside.
3. In another cooking pan, add 2 tbsp of
cooking oil with cloves, cinnamon stick

4. Pour in the tomato onion paste, cook until oil separated at the edge.

6. Mix the yogurt with 1 cup of water, pour into the pot and bring to boil.
7. Add paneer pieces, and cook for 2-3 minutes, add Garam masala and ketchup as seasoning. Continue cooking for 3-5 minutes, and add frozen peas before switching off the fire, cover the pot with lid and wait for few minutes before serving.
It goes well with chapatis and rice.
