这款家常辣油用处非常多,吃面条或馄饨时加上一勺,味道马上升级不少。也是做凉拌菜和沾酱不可或缺的调料之一。
I like to keep a bottle of
this homemade chili oil at home, adding a spoonful to any noodle
dishes makes it taste much
better.
It is also an essential
ingredient for Jiaozi/Chinese dumplings dipping
sauce.
材料:
1/3 杯 粗辣椒碎
2 大勺 红辣椒粉 (自己磨的更香)
2 大勺 白芝麻
2
大勺 花生碎
2 大勺 蒜蓉
1 杯 食油
2 根葱 (切段)
3-4片姜
1 小勺花椒
1-2 只大料/八角
5-6 只丁香
4-5 瓣蒜头 拍扁
一段 桂皮
1 片 桂叶
1/4 小勺
鸡精粉
Ingredients:
1/3 cup Coarse Chili flakes
2 tbsp of Homemade Red Chili powder (Or Cayenne Chili Powder)
2
tbsp of white sesame seed
2
tbsp crushed roasted peanuts
2 tbsp of Minced garlic
1 cup of cooking oil
2
Spring onions
3-4 slices of ginger
1 tsp of Sichuan pepper corns
1-2 Star Anise Optional
4-5 cloves of garlic (Crushed)

1 Cinnamon stick
1 Bay leaf
1/4 tsp of
Granulated Bouillon Chicken

在一个可耐高温的深碗里,倒入粗细两种辣椒粉、芝麻、花生碎和蒜蓉,拌匀.
2. 把油和香料等(除了辣椒粉和鸡精粉)在一口小锅里中小火加热8-10分钟至香料的香气开始溢出,当青葱开始变黄褐色时香料油就好了。
3. 趁热把1/2的热油倒入刚刚的的辣椒粉里,拌匀。可用个滤网把香料隔开,只取热油。

1. Place Chili flakes, Chili Powder, Sesame Seeds and minced garlic in a stainless steel or ceramic bowl.
2. Place a sauce pan on
stove, add oil and all spices in the pan, cook at medium
low
3. Place a stainless steel
sieve over the bowl with Chili powder, pour 1/2 of the hot oil over
Chili powder, return the sauce pan back on stove and heat up for 1
more minute.
4. Stir the Chili powder
with oil before pouring the remaining hot oil into the bowl. When
it is cooled, add
5. Store the Chili oil in airtight container, it should stay good in room temperature for 2 weeks.
