This Month: Napa Valley/Cabernet Sauvignon
 
The Napa Valley: This region is by far the best known of the major wine growing regions of the United States, with a climate very similar to Europe’s best wine producing regions. The first commercial vineyard was founded in 1858 by John Patchett. Napa Valley wines became world famous during the “Decision of Paris” when expert reviewers in a blind taste test rated a Napa Valley cabernet sauvignon as superior to France’s most famous Bordeaux wines. Today Napa valley has over 450 wineries in an area only 60 kilometers long and 8 kilometers wide. Napa has become a major tourist destination, attracting some 4.5 million visitors every year.
 
Cabernet Sauvignon: Perhaps the most widely recognized red wine grape in the world, cabernet sauvignon is recent in origin, being a cross between the sauvignon blanc and cabernet franc varieties. Its popularity with grape growers stems from its adaptability to a wide range of climates and resistance to cold and rot. For winemakers, its appeal is based on the influence the winemaker can have on the final product while producing a wine recognizable as cabernet, based on the choices they make in producing the wine. A key element for cabernet wines are the bitter elements (tannins) produced while the juice is in contact with the skins (the maceration period). Winemakers can control this by reducing the maceration period, or by aging the wine longer.
 
Another means of reducing the tannins is by aging the wine in oak. Oak has a particularly strong effect on cabernet sauvignon, so much so that the specific origin of the oak can affect the flavor. Oak sourced from Oregon generally has a milder impact than that sourced from the Midwest or East Coast. Some winemakers blend different types of oak to get a more balanced effect. Use of chips or planks while fermenting the wine in stainless steel vats tends to increase the oak flavor. Barrel size can also affect the amount of oak qualities imparted to the wine. Cabernet is also often used in blended wines.
 
The Featured Wine: This month’s featured wine is a 2006 cabernet sauvignon from Long Meadow Ranch. Long Meadow Ranch wines are renowned for their elegance and balanced style, and the Ranch is known for its sustainable farming practices. This vintage won a Gold Medal at the 2010 Jefferson Cup.
