The Dragon Boat Festival is coming tomorrow and it is one of the most important Chinese traditional festivals. In the meanwhile, Suzhou has a lot seasonal and local food which can't be missed during this period of the festival.

Black rice is one of such these typical seasonal food nowadays. It looks like black, but it isn't the real black at the beginning. On the contrary, it is the white sticky rice dyed with special juice from Nanzhu trees.

According to his description, the leaves of Nanzhu trees are the most important material for black rice. In addition, Nanzhu trees are growing well only in natural and good environment and the fresh leaves should be collected and washed by local people carefully.

One of the confidential tips is the taste will be better if we add a few special triangle maple leaves to Nanzhu leaves.

Now he starts to show me how to make the fresh black rice. Firstly, it takes about 15 minutes for him to grind the leaves into small pieces.

He uses a piece of gauze to filter the juice of Nanzhu.

The white sticky rice is added into the juice and it is been soaking for ten plus hours.

The sticky rice will become light green little by little. The raw black rice has been completed when it is fetched from the juice about 12 hours later.

What's the most incredible is the black rice indeed becomes black from light green when the raw black rice is cooked.  The delicious black rice is completely finished when it mixes a little sugar.
