【芝麻法式小餐包】——值得珍藏的面包方子

 

这款小餐包尝试使用了冷藏发酵的方法

真是省时省力

烘焙过程分为两天

第一天将面团揉好

基础发酵结束后冷藏入冰箱(晚7点半)

到第二天晚上6点从冰箱取出回温一小时后整形

之后发酵、割包、烤制

不再像以前那样下班回家做面包感觉时间那么漫长

因为割包裂口中放了黄油

又是高温短时间烘焙

外皮口感略酥

有咬劲

内芯非常柔软

揉面时我添加的是Poppy seed

如果没有加黑芝麻也很香

:)

【芝麻法式小餐包】

方子来自@王光光光光

食材:高筋面粉250g、水160ml、细砂糖15g、盐3g、酵母3g、橄榄油15ml、炒熟黑芝麻15g 
表面用料:高筋面粉适量、无盐黄油适量 


做法:
1、所有食材用后油法揉至扩展阶段,加入黑芝麻揉匀。
2、将面团放入一个可密封的容器内,按扁面团,盖上盖子室温发酵1小时,接着放入冰箱冷藏发酵10至18小时。
3、取出冷藏发酵的面团室温回温1小时。然后在操作台上撒一点点的高筋面粉,放上面团用手轻轻按压排气,分成等量的

6等份,整型成圆球状。收口朝下摆入烤盘内。
4、将面团盖上保鲜膜,进行二次发酵,等面团发至2倍大后掀掉保鲜膜,在表面筛上少许高筋面粉。
5、烤箱预热205°,用锋利的刀片在中间划一条较深的割纹,将黄油切小条夹入割纹内。
6、放入预热好的烤箱内,中层200°烤12分钟左右。
