去年年底,一位在银行工作的朋友,凭借这道【干锅鱼头】代表她们分行参加总行的厨艺比赛,得了第二名,之后这道鱼头在我们朋友圈里非常流行,大家都说它简单易做,味道很赞,就算作为家宴菜也绝对长脸。此菜只需将鱼头剁块后,用酱汁腌拌,再入锅焗,不用放水,也不需要过多的烹饪手法,原汁原味。

 

这么看来,做法确实简单,但要注意三点:第一点,要想鱼头好吃,酱汁很重要;第二点,锅底要铺满姜、蒜、红葱头,这些取到提香的作用,还能防止粘锅,当然如果用有不粘涂层的锅做就更不用担心了;第三点,也是最重要的一点,此菜完全不放水采用干焗,要想锅底的佐料不焦,鱼头入味,选用的锅具非常重要,一定要密封性好,受热均匀,锅底厚实的锅。

 

比赛时炊具有限,朋友用的是最普通的砂锅,其他朋友们做这道菜的时候,用的锅具就五花八门了,砂锅、铸铁锅、厚底不粘锅只要是密封性能好的锅都有人用。这次用的锅是我的新相好,密封性好,导热均匀,做这道【干锅鱼头】再合适不过了,鱼头出锅后,非常的滑嫩,入口很鲜香入味,不愧是好锅出好菜啊。

【干锅鱼头】

 

主料:

鱼头       1个(1000g左右)

五花肉     100g

 

辅料:

         15

         20

芹菜       2

红葱头     15

指天椒     6

 

调料:

白糖       半茶匙

白酒       1茶匙

生抽       1茶匙

味噌酱     2茶匙

紫金椒酱   1茶匙

 

做法:

1.洗净主料并吸干水分,鱼头剁小块,五花肉去皮切片;

2.洗净辅料,姜去皮切片,蒜、红葱头去掉外皮保留原粒,指天椒切圈,芹菜去老叶切成小段;

3.取一空碗,将适量的生抽、白糖、味噌酱、紫金椒酱调成酱料;

4.用调好的酱料将鱼头拌匀,腌制30分钟;

5.鱼头腌好后,取钻石锅,下五花肉煎出油;

6.将姜、蒜、红葱头放入锅中爆出香味;

7.将鱼头连同酱料平铺在锅中;

8. 盖上锅盖,先中火焗3分钟左右,待锅中发出咕咕声后,转小火继续焗5分钟;

9. 时间到,揭开锅盖,倒入芹菜和指天椒;

10. 沿锅边淋入白酒,盖回锅盖再焗2分钟;

11. 焗好后,关火,揭开锅盖即可食用。

TIPS

1.酱料可按自己的口味调制;

2.指天椒不仅是调味还取到装饰的作用,不能吃辣可换成红彩椒或者红肉椒;

3.五花肉爆油能增加此菜的香味,不喜欢可换成别的食物油;

4.此菜并非一定要用钻石锅做,但得是密封性好的锅,如:砂锅、铸铁锅等。
