selection from the estate-owned
vineyards: 10 hectares of mostly
biodynamically farmed vineyards on
the south-facing slope
of clay-heavy terroir of Cumières
1er Cru;
*the
grapes (Pinot Noir &
Chardonnay) were all picked on
one Fruit Day, then all pressed and fermented together to
"erase the variety and focus on the
terroir";
*about half of
the wine was fermented in
large oak vats and then aged on fine lees in oak
for about 8 months before assemblage, with
another half fermented in stainless steel
tank;
*no
malo;
second fermentation
finished with a soft mousse--just 4.5 bars of pressure,
"demi-mousseux", for creamy
texture; zero
dosage.

Savory, umami scents of minerality (salinity & spiciness) make this wine immediately distinctive. But soon these mineral notes are overwhelmed by sensual, heady aromas of ripe, succulent fruit (pear, yellow apple & apricot). With further aeration, a light touch of tobacco emerges to add charm & class.
On the palate, sensual
texture of supple richness. Ripe, succulent fruit echoes the aroma.
As it sits in the glass, growing savory & umami tone,
intriguing tobacco note & more pronounced vinosity all
contribute to the vivid sophistication & depth
for all its ripeness & richness. Finally the
crystalline acidity & fine-grained, palate-staining minerality
(with salinity & spiciness) cut through the sensual richness to
give a finishing touch of purity & classic
austerity.
