Billecart-Salmon Cuvee Elisabeth Salmon 2000 Brut Rose Champagne (750ml)

Rose d’Assemblage (Composition: about equal parts Chardonnay and Pinot Noir, blended with 8% Pinot Noir red wine from Mareuil-sur-Ay)

18:47 Served upon popping the cork.

Salmon-copper robe. Vigorous effervescence.

Initially, the aromas are quite discreet yet ultra refined, with subtle woody scents and mineral notes followed by candied red berries.

Just a sip, wow, vigorous bubbles explode in the mouth, electrifying and vibrant, pushing forward almost severe chalkiness and intense inner perfume. Lingering aftertaste of candied red berries, with a classic undertone of fine bitterness.

 

18:59 Second pour.

Lush, broad bouquet of mineral, cream, candied red berries and just a touch of sandalwood.

The mousse has lost the initial explosiveness and instead become cushiony, which helps in  creating a round sensation infused with creamy red fruits. Fine bitter finish.

 

19:06 Third pour.

Browned butter and ripe cherry on the nose.

Mineral grip now sweeps the floor, covering up creamy, candied red berries until the aftertaste.

At this stage, the taste is reminiscent of Billecart Rose NV, but of course with extra dimension of finesse.

 

19:16 Red floral perfume with hints of sandalwood, then the nose evolves towards decadent Pinot.

 

Decent effort for vintage 2000, with the aftertaste being especially impressive. My only complaint is that it does not last long enough (it loses the focus and poise some 40 minutes after being opened), which I would put down to the vintage limitations…

Pray for my luck that one day I could come across the great vintages of Cuvee Elisabeth Salmon Rose like 1996 or 1998…
