洋蔬菜30-水菜Dandelion greens

在菜市场上经常看到一种绿叶大棵的蔬菜,问了买菜的人,她说这是一种蒲公英的变种,德语把这种蔬菜叫做狮子牙Löwenzähne,味道稍稍辛辣,用来做沙拉。
上次网友郁金香说这种蔬菜中文叫做水菜,我在中国的菜场上从来没有见过,倒是很多日本的食谱都用到这个蔬菜,在日本叫做Mizuna greens,但是在北美这种蔬菜叫做Dandelion greens。
买了一小颗,还买了一颗紫色的沙拉,把它们洗净切成段,放入樱桃醋,橄榄油,南瓜油拌匀,味道很清淡,稍稍有些辛辣,然后有些回甘。
一个正在付款买菜的德国妇女非常热情地向我介绍了这款蔬菜,除了美味,就是太有营养了,蔬菜含有钙,铁,抗氧化剂,排毒,大量的矿物质,多种维生素等等。
找了些英文资料,这种蔬菜真的是很有营养,价格也很合理,但是在超市里很难看到这种蔬菜,都是在菜市场才能看到它们翠绿的样子。
还买了些新鲜的豆角,土豆,还有鸡油菌,回家一起炖,油热,圆葱炒香,放入菌类炒熟,再放入豆角土豆,再放一些泰国冬阴功汤的调料,菜熟了酸辣中稍稍有一点点甜。
豆子吃了一大锅,到处找我私藏的李子酒,很可惜,已经被我悄悄地喝光了。
不过还有枸杞子酒,豆子不喜欢枸杞子的味道。
想起我去年酿的红米酒,豆子一闻就摇头,我还是喝二锅头吧。
好菜配些小酒,味道更加出色。
Dandelion greens are my number one choice for a smoothie green. Not only do they provide a higher amount of calcium and iron than most cultivated greens, they have a wide array of health benefits that make them the perfect all around nutritional boost.
