This time, “You Are the Chef” came to the Basilico in Intercontinental Shanghai Expo to show you the special charms of the exotic cuisines. Basilico is a relaxing and pleasant Italian restaurant in which the spaghetti, pizza and family style foods are highly recommended. Mr. LINO, Chef de Cuisine, has engaged in culinary art for over15 years. His experience of pursuing further education in Italian ICI International Culinary Institution and four years’ working experience at local restaurants not only has enriched his culinary skills but also has led him to a deep understanding of Italian culture and food. Today, Mr. LINO will bring us four traditional Italian family style delicacies.

Intercontinental Shanghai Expo

Located in the proximity of Pudong Expo site, the Intercontinental Shanghai Expo on the bank of Huangpu River is an extravagant hotel equipped with facilities to international standard. From here, you can enjoy the incomparably beautiful skyline of the metropolis as well as the unparalleled beauty of the glittering Huangpu River. With an exculsive geographical position and elegant environment, there is only 8 minutes ride away from the hotel to Lujiazui--the financial centre and famous business district in Shanghai. Convenient and fast, many railway lines are available for guests to get to the prestigious tourist spots in both Puxi and Pudong. The 384 deluxe rooms in the hotel monopolize the beautiful scenery of the Expo venues and the Huangpu River. Summer vegetables and gold grass mushroom & zucchini flower with Italy riso and Taleggio cheese D.O.P

Ingredients:
 60gram Italian rice
 30gram Gold grass mushroom
 2pc Zucchini flower
 60gram Green zucchini
 25gram Taleggio cheese D.O.P
 10gram Extra virgin olive oil, Butter
 10gram White wine
 5gram Cheese-Parmesan
 150ml Vegetable stock
 2gram Sea salt
 1gram Black pepper
 5gram Shallots

Directions:

1. Mince the shallots and cut the Zucchini flower and Green zucchini into shreds. Chop the Taleggio cheese D.O.P in to pieces of 3cm square. Grind the Cheese-Parmesan into powder in advance for subsequent use.

2. Put a little virgin olive oil in the wok and stir-fry the minced shallots until aromatic. Add Italian rice and fully fry them. Sprinkle 15ml white wine and turn to medium heat. Pour 30ml vegetable soup during the heating process. Add soup for several times when the liquid is about to evaporate and keep stirring the rice at the same time.

3. Stir-fry the Green zucchini and Gold grass mushroom with some virgin olive oil in another wok until they are done. Prepare salt and pepper for use.

4. Add the cooked Green zucchini and Gold grass mushroom to the medium-well Italian rice. Add the Taleggio cheese D.O.P and braise them with lid on for 2~3 minutes, until they fully are melted and mixed.

此次洋厨房摄制组来到了上海世博洲际酒店的Basilico意大利餐厅。这是一家轻松休闲的意式餐厅，主推意大利面、比萨及家庭式的地道美食。餐厅厨师长黄轶峰先生从事烹饪行业已有15年的经历，曾经到意大利都林国际烹饪学院深造并在当地餐厅工作四年，这不仅丰富了他的厨艺的技艺，也对意大利的文化和美食有了很深的理解。他将为大家带来四道风味纯正的意大利南北部家庭美食。

夏季时令蔬菜和金丝菌,节瓜花,塔雷乔芝士烩饭

食材：意大利米、金丝菌（新鲜虫草）、节瓜花、绿节瓜、意大利塔雷乔芝士、特纯橄榄油、黄油、白葡萄酒、帕玛臣干酪、蔬菜汤、海盐、黑胡椒、干葱

制作方法：
1.干葱切成细末，节瓜花和绿节瓜切丝，意大利塔雷乔芝士切成3cm小块，帕玛臣干酪预先碾磨成粉备用。

2.锅中放少许橄榄油，将干葱炒香后再加于意大利米充分炒透，淋入白葡萄酒浓缩。然后中火加热同时分几次加入蔬菜汤，每次当汤汁即将收干时再添加（30ml每次的量）。同时要不停的搅拌米饭。

3.在另一锅中将绿节瓜丝和金丝菌用橄榄油炒熟，盐和胡椒调味待用。

4.当意大利米饭煮至7分熟左右时加入炒好的节瓜和金丝菌，之后加入塔雷乔芝士切成小块，加锅盖焖2-3分钟，使融化拌匀。
