洋厨房之意大利篇

 

When you have tasty pasta at the restaurant, have you wondered how this simple looking dish is made? Maybe you’ve tried half finished pasta from the supermarket already, but what about make your own pappardelle with your own seasoning? Now Grand Hotels Magazine and You are the Chef TV show together present the homemade authentic pasta by Mattia Salussoglia, Italian Chef of Hilton Shanghai. Get ready to show some love with your own handmade pasta!

The prestigious Hilton Shanghai towers 40 storeys above the city’s former French Concession Quarters, strategically located in the heart of Shanghai. The hotel is within walking distance to major commercial establishments and two of Shanghai’s biggest upmarket shopping streets – Nanjing Xi Lu and Huaihai Lu, and is close to Jing’an Temple, Jing’an Park and the metro.

 

Pappardelle with Porcini Mushrooms, Fave Beans and Black Truffle

 

Ingredients:Porcini Mushrooms, Pumpkins, Garlic, White Wine, Extra Virgin Olive Oil, Butter, Parmesan Cheese, Chopped Rosemary

 

Method:

1. Clean the mushrooms slice it. Cut into cubes the pumpkins and chop the shallots.

2. Warm a large pan, add oil and start to roast the pumpkins with two pieces of garlic a bit crashed, few minutes after add the shallot, let roast and add the mushrooms, keep the fire high and wet with the wine, let evaporate fix of salt and pepper. Add in the pasta already boiled, sauté with parmesan and butter, topped with chopped rosemary.

通心粉配牛肝菌,蚕豆和块菌

 

用料:牛肝菌、南瓜、蒜、白葡萄酒、橄榄油、黄油、帕玛森奶酪、剁迷跌香

 

制作方法:

1. 清洗蘑菇,切片。 南瓜切块,剁干葱头。

2. 热煎盘,加入油、南瓜和2片剁碎蒜,几分钟后加入干葱头,然后加入蘑菇,保持高火,加入葡萄酒,收干水分后加入盐、胡椒和煮好的通心粉,与帕玛森奶酪和黄油同炒,撒上剁迷跌香。
