在东方威尼斯——苏州,品尝美食

A Gourmet Trip to Suzhou, Venice of the East

苏杭,苏杭,就像是孪生姐妹一样,美景和美女总是被人们同时提起。所以,当洋厨房剧组在上个月踏入杭州那片美丽的地域时,苏州早就“跃跃欲试”,等待着剧组的大驾光临了。那现在,就请跟随我们的脚步,让我们去看看苏州金鸡湖凯宾斯基大酒店和苏州世豪全套间酒店为我们准备了哪些美食吧!

 

苏州金鸡湖凯宾斯基大酒店

 

   座落于苏州工业园区美丽的金鸡湖和独墅湖间,酒店金鸡湖高尔夫球场,别墅群及独墅湖环绕其中,与万顷碧波的湖面相映生辉。酒店四周绿树成荫,鸟语花香,空气清新,在小型景观喷泉的映衬下,彰显独特魅力。

 

李信涛  行政副总厨  芦笋芝士蛋糕

 

原料:150克芦笋,50克帕玛森芝士,150克瑞士芝士,1/2干紫苏,3块烟肉碎, 1块洋葱碎,4个鸡蛋,1/2杯奶油,盐,胡椒,肉蔻。

做法:1、将烤箱预热190度,将派皮放入烤箱烤10分钟。

      2、锅中烧开水放入柠檬和盐芦笋煮2分钟。

3、锅中加入橄榄油放入洋葱和烟肉碎炒熟。

      4、将鸡蛋打散,加入奶油,盐,胡椒,肉蔻粉,帕马森芝士。

      5、将煮熟的芦笋摆在烤好的派皮中,撒上芝士碎,将鸡蛋混合物轻轻的倒入,然后放入200度的烤箱中烤半小时,至熟。

 

 

徐国雄  中餐行政副总厨  金牌扣肉

原料:750克五花肉,200克笋干,500克黄酒,500克酱油,200克白糖,葱,姜,干辣椒若干。

 

做法: 1、五花肉灼水断生,改成正方形。

 2、把肉放在锅中并加水,酒,酱油,糖,葱,姜,干辣椒大火烧开。文火煮1小时左右捞出。

3、肉冷却后,横批连到成片再盘成原型状,放到蒸笼上蒸1小时左右。

陈为民  餐饮总监  榄菜元贝蒸白玉

 

原料:澳带,玉豆腐,橄榄菜,自制豉油皇。

做法:1、将玉豆腐一切二直放入盆中。

2、将澳带吸干水,上浆后平放在豆腐上方。

3、将橄榄菜,放至澳带上。

4、上笼蒸4分钟左右,淋上豉汁皇,即可。

 

张翼  副总厨  香辣豆花鱼

 

原料:鲈鱼,豆腐,紫菜,虾米,香菜,辣酱油,盐,味精,黄酒,生粉,精制油。

做法:1、将鲈鱼宰杀,切片、上浆备用。

2、豆腐切片,加入沸水中捞出。

3、将锅里倒入油,放入鱼片滑熟。

4、洗净锅,放入二汤、鱼片、豆腐,加盐、味精、黄酒,用湿生粉芶芡,即可装盆。

5、淋上辣油,洒上紫菜和虾米,放入香菜即可。

Suzhou and Hangzhou, breathtaking scenery and stunning beauty, these words seem to always appear in pairs like twin sisters. No sooner had the shooting crew of “You Are the Chef” treaded on the soil of Hangzhou last month did Suzhou start to anticipate their arrival. Finally we are in Suzhou! Please join us to check out what culinary tricks are in store for us at Kempinski Hotel Suzhou and Wealthy All Suite Hotel Suzhou.

 

Venue: Kempinski Hotel Suzhou

Stretching along Jinjihu Avenue and Guobin Road, the Kempinski Hotel Suzhou emerges before your very eyes after a short but scenic drive in a large parkland which encompasses the 27-hole Jinji Lake International Golf Course, Villas and Dushu Lake.  The entire surroundings are refreshingly lush with trees and meticulously landscaped to provide an atmosphere of tranquility and peace.

 

Chef: Mark Li, Executive Sous Chef.

 

Dish: Asparagus quiche.

Ingredients: 150g asparagus, 50g parmesan cheese, 150g shredded Swiss cheese, 1/2 teaspoon dried basil, 3 diced bacon, 1 medium onion - chopped, 4 eggs, 1/2 cup cream, salt, pepper, nutmeg.

 

Production:

1.Preheat your oven to 190℃. Bake the piecrust at 190℃ for about 10 minutes. Remove from oven and let cool.

2. Bring water to boil in a large saucepan. Put lemon and salt in water then boil up. Put asparagus in water until tender-crisp (about 2 minutes).

3. Sauté diced onion and bacon in a little bit of oil.

4.Break eggs into a bowl and whisk until completely beaten. Add cream and season with a bit of salt, pepper, nutmeg and parmesan cheese.

5.In your cooled crust, place the shallots and arrange your asparagus. Sprinkle the cheese on top and then carefully pour the egg mixture over it. Place on a baking sheet and put in oven at 200℃  for approximately 30 minutes or until set.

 

Chef: Peter Xu, Chinese Executive Sous Chef.

 

Dish: Traditional style “dong po” pork, served with chestnut pancake.

 

Ingredients: 750g pork belly, 200g dried bamboo shoots, 500g Chinese alcohol, 500g soya sauce, 200g sugar, spring onion, ginger, chilli.

 

Production:

1. Boil pork in hot water for a few minutes. Chopped it like square.

2. Boil Pork with Chinese alcohol, soy sauce, sugar, spring onion, ginger and chilli with water for about 1 hour with right fire.

3. Chill pork to rehabilitate and chop chilled pork. Then steam for about 1 hour.

Dish: Steamed bean curd with scallop.

 

Ingredients: Australian scallop, bean curd, mustard leaf with olive oil, home made black bean sauce.

 

Production:

1. Cut the bean curd in two and put them into the pot.

2. Blot up water from the scallop, starch it, and then put in on the bean curd.

3. Layer mustard leaf with olive oil over Australian scallop.

4. Steam for 4 minutes, sprinkle some home made black bean sauce over it and serve.

 

Chef: Andrew Zhang, Executive Sous Chef.

 

Dish: Aromatic and hot perch fish.

 

Ingredients: perch fish, bean curd, seaweed, dry shrimp, caraway, chilli sauce, salt, gourmet powder, yellow wine, glutamate, cooking oil.

 

Production:

1. Kill perch fish, cut into slices and season with glutamate for later use.

2. Cut the bean curd into slices, and soak in boiling water for a while.

3. Put some cooking oil into the pot, and quick–fry the fish slices.

4. Clean the pot, put some thin soup, fish slices and bean curd in the pot, add salt, gourmet powder And yellow wine, and then coat starch using wet glutamate. Put the fish in the plate.

5. Sprinkle chilli sauce, seaweed and dry shrimps over the fish, top it with caraway and serve.

 

Suzhou is known as Venice of the East for its unique waterway landscape. Streets and houses built along the waterways and the juxtaposition of vehicles running on the streets and boats in the waterways combine to make for an idyllic scene of “bridge, running water and households”, beckoning you to stop and sit down to enjoy the delicacies the city has to offer.
